Tasty Baked Meatballs

YUM!!! These are really good! My new meatball recipe! Had to do a few subs.. 2 # gd beef, 1 # pork sausage; and had to use italian seasoning mix, but otherwise used recipe as stated. Delish! Kids loved it! Will use many times again!

Sesame Pork Roast

This was great, by reviews of family! I didn't get any, had to go to work and it was GONE when I got home, expected left overs. Had to make changes based on what I had--> 1st off, no water, and used teriyaki sauce instead of soy+sesame+molasses. Regular onion laid over roast instead of green onion; added some onion powder and extra soy sauce. Instead on the cornstarch/water, I roughly shredded roast when done and added it back to sauce and served over rice. RAVE reviews!! Will def make again when I can get some!! Mouth watering as I think of it! :)

Butternut Squash Soup

Tastes like heaven, and it doesn't hurt that it looks like nacho cheese sauces." 14 yr old daughter's comment. "Mom, you should makeke this EVERY night!" 11 yr old daughter's comment. LOL, thought I'd get this all to myself!! I did roast 2 butternut squash, unseasoned, and only used 1/2 of an 8oz brick of Neufchatel cheese, otherwise made recipe as written (oh, except used only about 1 tbsp butter to saute onions). Delish!

Bow Ties with Sausage, Tomatoes and Cream

I also made this with sweet turkey sausage and fat free half and half. It turned out delicious! I otherwise followed the recipe exactly. Don't have anything to compare it to (as far as full fat version), but my family of 6 loved it! This will definitely be made again and again, full of flavor, but not too overpowering for the kids (oh, I did leave out the red pepper flakes and let the adults add their own).

Roast Sticky Chicken-Rotisserie Style

We used this on our turkey breast for Christmas dinner. It turned out GREAT!!! I would recommend using this only on chicken or turkey with skin, I made chicken breasts with this seasoning mix and they were very salty and the seasoning was overpowering. But when made with the skin on, the breast meat was to die for!!!

Skillet Spaghetti

Big, BIG hit in our house with 4 semi-picky eaters. I was leery of cooking the spaghetti in the dish, didn't want mush, but I'm so glad I did. The spaghetti was very soft, and the flavors blended nicely. Great dish for the kids.

Italian Sausage Soup with Tortellini

Wow! Was this ever a hit. It was declared (by my MOTHER) 'the best homemade soup ever.' I used canned tomatoes, and frozen tortellini, and served it with grated parmesan cheese on top, with, of course, fresh baked bread from the bakery. Even my kids loved this!

Easy Quiche

This is a really great "desperation dinner," that I almost always have the ingredients on hand for (it helps that I buy tons of different cheeses on sale and stick them, unopened, in the freezer). You can make it low fat with no real appreciable difference in taste by using skim milk, egg beaters and a mix of low fat and no fat cheese. A definate keeper.

Peppermint Chocolate Fudge

This was very delicious. My picky 'tween' daughter declared these 'to die for,' and she was right. I made them in mini baking cups to add to Christmas cookie trays for neighbor gifts, and I didn't have to even bother with peeling off foil, and cutting it up! Perfect!
