Slow Cooker Cilantro Lime Chicken
This is my go-to recipe to make chicken filling for tacos, burritos, nachos, quesadillas and all things mexican. I like to add a can of black beans, corn and mexican diced tomatoes. I have also tried with many different salsas, I like it best with the chunky style - mild so the kids don't complain about the heat - the slow cooker intensifies the seasonings. I throw it on low all day, shred the chicken and add lime and FRESH cilantro and cook another half hour. What a great recipe!

Slow Cooker, Easy Baked Potato Soup
I made it as written, but added carrots and broccoli just to get a few veggies in. I had fresh parsley so I used it, and substituted chicken broth because I didn't have bullion, I think both substitution were minor and did not affect the recipe. Family loved it! Easy to make, tastes great as it is written. Next time I may tweak it a little to meet my tastes, but its a can't lose easy meal to make out of things you have on-hand. I also cooked on high 5 hours and it turned out perfect.

Grilled Lemon Chicken
I have been using this on two boneless skinless chicken breasts a week for at least a month, as soon as its gone my kids ask for more! We slice up leftovers and use on salads and in pasta recipes. Tastes great as is, no tinkering needed with this recipe. I do marinate overnight, and think fresh squeezed lemon juice is best. Thank you for sharing such a great recipe!
