Daddy K's Milk Boiled Corn on the Cob

Ooh..I like this a lot. I have never used a recipe like this and I loved the flavor of the corn. I just added salt and pepper. Super sweet!!

Chile Verde II

I wasn't feeding a large crowd so, lowered the amount of the ingredients. I only used 2lbs of pork browned in bacon fat, 2cups of broth, i made and used the tomatillo salsa recipe from this site and charred two very large Roma tomatoes instead of the can of tomatoes. I charred all the peppers then peeled them. I sauteed two small diced onions with 8 minced garlic cloves. I pureed everything and threw it in the slow cooker. WoW!!!! Best ever!!! It still made a lot so, I took half the sauce and froze it for enchiladas next week. The other half, I left all the meat and added 3 (sliced) potatoes and a bag of sweet frozen corn. Thee BEST chile verde stew ever!! It was A LOT of work but the flavor was out of this world!!

Tomatillo Salsa Verde

I made this just because I needed this as an ingredient in my Chile Verde II recipe on this site. WOW!!! Lots of flavor, worth the work. I used two Serrano Chile's for the heat. I didn't boil it. I charred everything then pureed. Yum

Fluffy Peanut Butter Frosting

This is thee best frosting! The only change I made was I used pastry pride instead of cream/milk. I keep pastry pride in the freezer in a freezer bag. Then I can take a large ice cream scoop and scoop out as much as I need. Today I took out one large scoop and beat it a little to help it defrost a bit. I probably ended up using almost 1/2 cup of pastry pride. It makes the frosting fluffy yet, smooth and creamy. It was fantastic!!

Sweet and Tangy Broccoli Salad

Very tasty but I felt it had too much vinegar. Everyone loved it. I added cashews and sunflower seeds for a nice crunch. I also like to slightly blanch the broccoli which takes the raw taste away.

Soy Ginger Salmon

Yummy!!! I used lime juice instead of oj and fresh minced garlic. Very tasty. I also cooked it for 13 mins at 400. I served this with cilantro lime cauliflower rice. Great combo.

Cilantro-Lime Dressing

Holy cow this is fantastic!!! I doubled everything except the honey. It was absolutely delicious! Wow!! Update: I have made this several times this week. Everyone is raving about it. Follow the recipe exactly except try 2Tbs of honey first then add more to your taste. I wish I had found this recipe years ago. Unbelievably good!

Baked Macaroni and Cheese III

This was very good. I always have to make do with what I have on hand. It's just me and hubby so, I cooked up only half a box of macaroni. Used 1 egg, 1 cup of milk, 1/2 stick of butter, 1/2 cup of sour cream, 1/2 cup of parmesan cheese, a few shakes of garlic salt, and a teaspoon of flour. I mixed this cup then added about 2 1/2cups of cheddar cheese. Then I topped it with panko crumbs mixed with parmesan cheese dotted with butter. I baked for 35 mins. Hubby loved it!!

Greek Rice Salad

Holy cow, this is great!! I didn't have all of the ingredients so, I substituted white long grain rice (Brown rice), black olives (katamala), garlic salt (minced) and dill (mint). I didn't have avocados but Everything else I had and used. It is fabulous!!! I kept the tomatoes and cucumbers separate until I was ready to serve. I also made sure to seed both. I also had fresh corn so, I added it. Omg!! It adds a sweet crunch that makes this salad. I even added a tiny amount of sugar and Apple cider vinegarto the dressing. I also liked mixing everything up with the dressing before adding the tomatoes and cucumbers. I think it melds the flavors together wonderfully. So super yummy!!

Mom's Best Peanut Brittle

Yay!! Everyone loved this brittle. It was very easy and has a light crunch that we love. I hate a hard brittle. I used sweet and salty Spanish peanuts that I got at Costco. So, I didn't add the peanuts until it reached 250, like others had said to do when you don't have raw nuts. It worked perfectly. But, the second batch didn't come together because I decided to try waiting until it reached 300/305 like some others had also did. Nope, that didn't work at all and I was left with a greasy hard batch. I also tried heating my cookie tray so it could spread further and I didn't like doing that because I felt it made the batch hard. I also decided after making 3 batches that I prefer to pour the candy straight onto the cookie sheet without using forks. The texture stays fluffy therefore it keeps a light crunch instead of getting harder. This will be a yearly holiday candy I will continue to make. We Loved it so much! Update: I didn't throw out that 'bad' second batch. After, a few days we decided to eat it, greasy or not. It turned out delicious. I can't believe it. Very light crunch and really not very greasy.

Delicious Ham and Potato Soup

Wow, this was the best soup!!! Loved it so much! I was worried because I didn't have celery or even an onion. But, I used carrots and onion powder. I also used a package of veggie soup mix. The roux was the key. I didn't have butter so, I used butter flavored Crisco. It was so delicious. I'm so glad I used low sodium chicken bouillon. If not, it would've been too salty for sure. I'm so glad I made a huge crock pot full. Delicious!!

German Sweet Chocolate Cake I

I specifically used this recipe for the frosting recipe. It makes more and more is best. The recipe is so delicious and incredibly sinful. So, easy and by far superior to store brought. I will always make thisinstead of buying it. The entire raved about it for days....no, weeks actually. So, yummy!!! Oh, and yes make the frosting first....then bake your cake. It's a must, it needs to set up a long while.

French Breakfast Puffs

Yummy! I just made these and thank goodness I followed the advice of another review that said it bakes in less time so, watch them. They were very ready at 15mins. I rolled the entire muffin in the topping mixture which I doubled. I also added vanilla to my batter. The kids and hubby went crazy for these. Will be making these a lot.

Chicken and Chorizo Pasta Bake

Yay, we all liked it. I didn't have all of the ingredients but, this was a great starting point. I used spaghetti sauce and dry milk. I chopped up an onion but had no green pepper. I used egg noodles because that's all I had. I must say that I added a small can of chipotle pepper sauce and it made all the difference. Dash of cumin and smoked paprika, too. Kids ate it up. We definitely make again.

Grands!® Mini Pizzas

I can't believe we've never made these before. The kids loved rolling them out and topping them with all their favorites. They went nuts for them. I baked at 350 for 10mins but they didn't look done in the middle Although, the bottoms were golden. So, I turned off the oven and put them back in for 3more mins. They were perfect and delicious!

Monkey Bread Made Easy

We loved this easy recipe! I tried to use my Apple slicer to cut the biscuits up but, it didn't work. I think it was too dull. So, I used scissors and cut the biscuits in half then in thirds. The kids loved helping and they went crazy for them. The only thing I did different was bake at 350 for 16-18 mins and add toasted walnuts. I watched these babies like a hawk because I was worried they would burn. I made them in a mini Bundt cake pan and the rest in a cupcake pan. I must say that they were adorable as mini Bundt cakes. The sticky butter goo was the best part so, next time I will make a half batch more. So, cute and yummy! And it's true there was no uncooked middle.

Cocktail Meatballs IV

I used frozen beef meatballs and added chucks of chopped onion and green bell peppers and a can of pineapple, drained. So, delicious and everyone ate it up fast!! Now, my brother brings this to potlucks, too.

Sesame Pasta Chicken Salad

Very delicious!!! I had to quickly put together a lunch so, I didn't have cilantro or green onion. I definitely think it would be even better with both. I cut two chicken breasts into bite size pieces and sauteed with garlic and onion powder and more ground ginger. Then I decided to add about 2Tbsp of peanut butter to the cooked chicken. Then I mixed it into the dressed pasta with julienned carrots, cashews, and water chestnuts. So, yummy! FYI: I did love the dressing on its own and I'm not sure if the peanut butter really added much.

Chicken Wild Rice Soup I

Yum!!! We loved it! I doubled the carrots, rice, curry and dry mustard. I didn't have sherry so, I used 1 1/2 Tbsp of apple cider vinegar. I used evaporated milk instead of half and half and I didn't make a roux, I used cornstarch. I forgot all about the almonds but will truly it next time. Very satisfying!

Mom's Favorite Baked Mac and Cheese

Yum! Kids loved it. I only made a few changes because of what I had at home. I used all medium cheddar cheese and a couple of squirts of yellow mustard instead of dry mustard. Yummy!
