Naan

I tried this recipe when I first moved to TZ and didn't have an oven. I was missing bread. We then opened a restaurant here geared at expats and this naan was a cornerstone of the menu. We served it with dips and with soups. It is delicious and it's very difficult to mess up. We let it rise for the recommended hour and then roll it into balls and place on a cookie sheet. We cover leftovers with plastic and keep in the refrigerator for 2-3 days. A yummy variation is to add 1 tsp of cumin rather than the garlic. A fun thing for young kids is to use cookie cutters and make naan bread in the shapes of animals and such!

Blue Cheese Cole Slaw

Loved the slaw dressing. Had to improvise as I didn't have dried mustard. So, I crushed fresh mustard seeds and added yellow mustard from the squeeze jar. Husband and 2.5 year old loved it.

Marrakesh Vegetable Curry

I've made this curry 3 times in the past week! The great thing is that there are so many vegetables in this recipe that if you don't have one of them on hand it won't be missed. We have found that we even like the leftovers served cold. Had to make substitutions and omissions as we can't easily get red bell pepper or spinach. So just left it out and used the local green leafy vegetable that is regularly available. I am having to use dried chick peas, so it takes a little longer but they really are good in the dish. Make sure to simmer in the orange juice with the lid on!

Man-Lovin' Potatoes

This had great flavor. Living in Tanzania, I had to substitute. Since mayo is very expensive, I used about 1.5 cups homemade sour cream and 1/2 cup mayo. The skins on the potatoes are VERY dirty so I always remove them. We had only thick collar bacon available at the time but it was delicious in there. The leftovers were even better! We will make this again and again and again. Thanks for the recipe.

Indian Sweet Potato and Lentil Soup

This is a yummy Indian inspired dish. It's great for us here in Tanzania because all the ingredients are readily available (including the red pepper flakes I carried over from the US!). Love the flavor, however, if you want a soup, you'll have to add liquid as there is not enough broth left after cooking the lentils and sweet potatoes. We happily eat it as a side dish of veggies. We use swiss chard that we grow ourselves as we don't have any luck with spinach. Thanks for the great recipe!

Super Easy Dip for Artichokes or Asparagus

The artichokes were ready and I had forgotten to look up a dipping sauce on-line. I found this one and it was ready in seconds. I did not find it bland at all; it was really flavorful. But I am using the brands available to me in Tanzania (American Garden Mayo which tends to be strong on the vinegar). It was fantastic with artichokes and a welcome change to melted butter or plain mayo. I always stuff artichokes with bread crumbs, olive oil, oregano, an egg, garlic and some sort of cheese. Flavors were great with the dip. I might try adding some yogurt next time just to reduce the expense and calories of so much mayo. 1/2 recipes was plenty for 2 people with leftovers.

Blended Mocha Drink

This makes a yummy drink that tastes like the very expensive blended drinks at Starbucks. We made it without the chocolate syrup and espresso because they are expensive and hard to find here. We don't have a blender but it was delicious poured over ice. I think the better the coffee you use, the better it will taste as well. It has become a cool refreshing treat for us in the hot dry weather. Thanks for sharing the recipe.

Mongolian Beef and Spring Onions

Delicious! We used only 1/2 cup oil and seared the meat in the wok. Worked fine. We put the meat in the corn flour before heating the sauce-a little time saver. We didn't have green onions but instead had fresh brocoli and frozen leeks. We cooked those in the leftover oil from cooking the beef and then threw everything in. I'll say it again: Delicious.

Batman's Best Caesar Dressing

This is a wonderfully tasty and easy-to-prepare recipe. We didn't have Parmesan the first time I made this dressing but it was still delicious. We don't have a wide range of olive oils available here and I doubt what we get is very good quality but the result is fantastic. LOVED it with the Parmesan! Thank you for sharing the recipe.

Poppyseed Salad Dressing

Yummy, thank you for sharing the recipe. Missed the part about how to make onion juice the first time around so we will try that in the future. We used sesame seeds because I didn't have poppy seeds. It was still nice but I'm sure it tastes fantastic with poppy seeds. Since we've been living in TZ the past 3 years and eating less processed foods, I find I have to cut the sugar in EVERYTHING because our taste buds have changed. This recipe was no exception.

Chipotle Honey Roasted Peanuts

I have made these many times now and people LOVE them. I have trouble getting smoked chipotle seasoning though and have to bring it from the US when we go back. I can't buy skinless peanuts here and I wonder if that is why the sugar always seems to melt and then clump up. Anyone have any suggestions?

Butternut Squash Casserole

I make this when we have guests for dinner and everyone loves it and asks for the recipe. Since living in TZ for 3 years our diet now includes only fresh food made from scratch which means we don't get a lot of sugar from processed foods. So, I cut the sugar in half, use pumpkin when I cannot get butternut squash, and I eliminate the topping all together because we don't get anything like vanilla wafers here-but I don't mind eliminating that processed food anyway, and the extra calories from the sugar and butter.

'Chinese Buffet' Green Beans

My three year old scarfs up these green beans and finishes off whatever's left in the serving bowl. We don't get oyster sauce here, so I substitute a "mushroom soy sauce" instead. I'm assuming that oyster sauce is made from oyster mushrooms... We keep minced garlic in oil in the fridge ready to go, so we never use the thin slices as called for, it's still delicious.

White Chocolate and Raspberry Ice Cream

We loved this ice cream. We have tried about 3 other recipes for ice cream. Because the eggs here are not refrigerated, it was important for me to find a recipe that cooked the egg. The consistency was just like store bought ice cream. The first time I made it, I cut the sugar to 1/2 cup and it was still yummy but I will add the full amount in the future. White chocolate chips are non-existent here and bars are too expensive so we didn't use any. Plus, it probably would have been really sweet for our taste. I didn't want to mess with scraping the vanilla bean so we just put the vanilla in at the end. We thought the raspberry handling was lots of work so the 2nd time we just heated the raspberries and poured them in seeds and all. Yummy yummy makes me yearn for haagen daaz being so far from home. We also just put it in the freezer as we don't have an electric ice cream maker. It's thick enough that things don't separate while setting up in the freezer.

Homemade Mac and Cheese

This is a GREAT basic Mac and cheese recipe that can be spiced up to your own tastes. I read a lot of the reviews after making this 4 times to find some hints for spicing it up a little. Having traveled the US selling Napa wines, eating lots of delicious cheeses, I believe that if people find the recipe isn't cheesy enough, they simply need to try a different cheese. For instance, sharp cheddar has a distinct flavor different from medium cheddar. In our case, we don't have access to great cheeses unless we want to pay $37 for 4.5 lbs of imported cheddar from New Zealand. Even with the "cheap" stuff from Kenya this recipe tastes great, so anyone living in the US with access to a great selection of cheeses, I really encourage you to try another one. I don't think it's the recipe, it's probably the cheese. On another note the sauce really thickens only AFTER adding the cheese. We leave off the bread crumbs as I don't want the extra work and calories. Our family of 4 can nearly finish this in one meal without any other sides...delicious.

Homemade Flour Tortillas

We used vegetable shortening and the result was delicious. The texture was just like authentic tortillas. We cooked them before lunch intending to use them for a taco dinner but I couldn't wait and ate 3 for lunch with salsa and hummus! This will become a staple for us since we cannot buy things like this in Tanzania. I am going to try frying them up as well to see if I can produce good tortilla chips from them.

Tomato Zucchini Casserole

Prepared it exactly as it's written in the recipe. Everyone liked it a lot. We are going to spice it up a bit more next time. Wonderful way to use up zucchini and tomatoes from the garden!

Cheesy Zucchini Casserole I

Delicious despite my mistake of mixing the cheese in with the egg,onion & spices. Next time I'll remember to put the cheese on top and it won't dry out. I added little slices of tomato from the garden and increased the egg to 2.

Sloppy Joes II

This was really good. In the US I always used the McCormick packages of seasoning, but I can't get it here. So, I was looking for a scratch recipe. I missed the part about simmering everything for 45 minutes so the meat hadn't really soaked up the flavor but it was still good. It seems that it would get a little dry cooking it for that long, but I'll try it next time. Easy recipe. Thanks for sharing it.

Tortilla Espanola (Spanish Tortilla)

I've made this twice now. It's so filling that we only need one recipe to feed 4 of us with a little left over. Be sure to use a large enough skillet that you can easily stir the potatoes. That's the only challenging part. I added green pepper, cheese and ground beef the 2nd time around and we ate it warm. Yummy.
