White Chip Chocolate Cookies

Great recipe! I made only half of the recipe and it gave me about 12 3 inch cookies. I also altered this recipe, i followed the suggestions of the reviewers but only used half of the cocoa powder and melted 3 squares of Lindt 70% dark chocolate and added it in after the egg and vanilla. (use 6 squares for the full batch) It gave an incredibly moist, chewy chocolate cookie with about 1/4 of an inch of crisp on the outside. Perfect because i hate hard cookies. I love this recipe!

Chocolate Covered Pretzels

If your chocolate turns lumpy, its because the chocolate you are using is of poor quality and has a low cacao butter content(candy bar chocolates, regular chocolate chips). Believe me, i've tried making ganaches and chocolate products with these before.. Use dark chocolate or good quality dark chocolate. I always use Lindt Excellence 70% cacao dark chocolate; it suits my taste perfectly. You can also use 65% cacao, and maybe try 50%? Also, if you can't find heavy cream, it is also called whipping cream in other places. Any cream product with a 30-35% fat content. You can also use double cream, which has an even higher fat content.

The Best Rolled Sugar Cookies

I tried this recipe for the first time for Halloween. I made one batch of these cookies and decorated them with royal icing and handed them out to my friends and classmates at school and they all LOOOOVED IT! Seriously, I make treats every year and these have got to be the most popular so far. I made the dough and let it chill in the fridge and came back to read the reviews on this recipe (stupid, i know, i should've read them before) but many people said to add more vanilla and sugar because they were too bland. So i went back to the dough and added another cup of icing sugar and kneaded it with another teaspoon of vanilla. I let the dough chill overnight and while I was rolling out the dough, i only took out about an orange sized amount of dough to work each time while the rest stayed in the fridge. I found it still got sticky and hard to work with very easily. I also didn't line my cookie sheet with parchment because i ran out, and when i baked the cookies they were tougher to get off. Also, i let several batches in the oven a little too long and they picked up some colour T__T, make sure you keep a real good eye out on these cookies, even 2 minutes could make a difference. When i tasted the cookies, they were still a tab bit bland, but since i iced them with royal icing later on, it didnt really matter. However if you aren't going to ice these, i would recommend using about 3 cups of sugar and a tablespoon of pure vanilla extract, maybe even some cinnamon if you like.

Mocha Chocolate Chip Banana Muffins

Just made these, but i only had 1 cup of all purpose flour, so i substituted with an extra 1 1/4 cup of cake and pastry flour, and used a little less of the baking powder and soda. I also added a teaspoon of cinnamon. It turned out AMAZINGG! The only thing was that it was a tad bit too sweet for me, so i might reduce it to 1 cup of sugar next time.
