Ginger Glazed Mahi Mahi
This is a really great recipe. I never cooked mahi myself and was worried this would taste too vinegary. I was wrong! A very savory and balanced recipe that complimented the fish amazingly. I'm currently using the same marinade on some wild salmon I bought. I left out the extra salt this time and substituted agave for the honey. Also used all olive oil, rubbed it with dill, and baked in the oven on a cooling rack over a cookiesheet. Turns out phenomenal!
