Pizza Casserole

I made a few changes. I used rotini instead of egg noodles and added sausage. Honestly, I was underwhelmed. It reminded me of my dear mothers cooking, which is why I have taken the time to actually learn how to cook.

Burrito Pie

This was very simple and tasty. I omitted the olives and due to pan space I just heated up the beans in the microwave and spread them on each layer of tortilla. Also, I used half black refried beans as well. Will definitely become a regular.

Beef Bulgogi

This was absolutely delicious. The only things I did differently was to add Sriracha to the marinade and although I didn't technically measure anything, I added a little more garlic than called for. Everyone in the family really enjoyed it and unfortunately there was none left over for me to eat as a midnight snack.

Taco Pie

The kids didn't like it, I couldn't believe it. I thought it was ok, not worthy of 5 stars though. It is ez to make, but not a ton of flavor. I would add some more spice to it, some jalapenos, sweated onion and avocado to give it more flavor.

Spicy Basil Chicken

I think what really makes or breaks this dish is the oyster sauce and the basil you use. I think that sweet basil pairs well with this dish and the brand of oyster sauce I used was Good Luck which I didn't think was the best. I will try another brand next time. I didn't have chili oil so I used vegetable oil which was fine. I used 2 serrano chilies and 1 anaheim. I like spicy and it was plenty spicy enough. I almost threw in some Sriracha and I am glad I didn't. Overall it was really good and I will be making it again.

Parmesan-Black Pepper Arborio Rice Pilaf

This recipe was pretty good but I would make a few changes next time. I would cook it for 15 minutes and it needs something to brighten it up a little. I felt it was a little bit bland. Maybe add a little lemon to it would be good.

I agree this recipe is really good. I did add some cornmeal to the breadcrumbs like someone else suggested and it added a nice texture to the breading.

Dijon-Tarragon Cream Chicken

This is a really good recipe, but I only gave it 4 stars because of all the editing I had to do to suit it for my tastes. I did like most people, I coated it in seasoned flour. After, I deglazed with some white wine, and added some shallots and garlic. Then I add the cream, mustard and tarragon. I really like this with some plain white rice.

Ginger Glazed Mahi Mahi

This was excellent. Rather than pan sear the whole fish, I only seared the skin and then stuck it under the broiler for about 8 minutes. It is so much easier in my opinion to gauge when it is done that way. I thought the glaze was really fantastic. For my tastes, I would probably add about another 1/2 tsp of ginger, but my girlfriend who doesn't like ginger thought it was perfect. Next time I think I will add a little Sriracha chili sauce to spice it up a bit. I also agree that this would go really well with pork and I will be trying it soon.

Sesame Green Beans

These are very good. My girlfriend likes them even better than my garlic green beans I make. I also didn't add any garlic to the recipe as it would hide the toasty flavor of the sesame seeds too much.

Buttery Corn Bread

This corn bread is the best I have ever had. The kids ask for it regularly and ask me to make extra so they can eat it for breakfast. I like it with a little honey drizzled over it.

Sage Pork Chops

Very good. Changed it up a little, added a third cup of red wine, fresh oregano, garlic and onion to the beef stock. Also omitted the salt as there was enough in the stock. Thickened the sauce with cornstarch and added it to rice. Very good for the effort. Simple and tasty.

Lemon Chicken II

I have been to plaenty of chinese restaurants in LA, SF, Phoenix, etc., and this is as good as it gets. The marinade is a great idea that although subtle, really adds to the overall flavor. Excellent.

Pasta, Broccoli and Chicken

Good recipe as long as you pay attention to the reviews. I used 3 tbsp of pesto instead of 2, and marinated the chicken in rosemary, garlic and lemon juice. The family all agreed I will be making it again.

Mexican Rice III

This is one of the best recipes I have found for Mexican rice. Beware though if the jalapenos are extra spicy, it can get hot. I would personally add half a tsp. of cumin extra.
