This recipe is absolutely wonderful! The instructions were perfect. I agree with one of the previous posters about rolling out the rope and letting it rest. But I just wanted to add something that really worked for me. After rolling out ropes a bit, I covered them with a slightly damp towel while I rolled out the others. When I went back to finish rolling them out, they were much easier to roll.
I used only all purpose flour because I didn't have bread flour on hand.
I didn't use parchment paper, I simply greased the cookie sheet. Also, I laid the pretzel on a spatula while I dipped them in the soda water bath, then flipped them over onto a cloth for a moment before putting them on the cookie sheet.
They were light, but chewy... just like a mall pretzel!
