Yellow Squash

This was much better than I expected. I substituted turkey bacon fried in a tablespoon of canola oil, lite soy sauce and lemon pepper. Will definitely cook again.

Broiled Tilapia Parmesan

Hot Italian Sausage and Shrimp with Asiago Grits

This was good. Substituted turkey sausage. We like spicy, so I increased the Cajun seasonings to one teaspoon and added a teaspoon of cayenne pepper. Next time, I will thicken the sauce and try it over pasta.

Barlow's Blackened Catfish

I usually read the reviews but was in a hurry. Wish I had! lol It was okay. Next time I'll use less salt, two teaspoons was definitely too much. Other than that, it turned out well.
