Slow Cooker Italian Beef for Sandwiches

This recipe was a big hit with the whole family, even my pickiest eater. We served it on Italian rolls with sauteed onions, garlic and assorted bell peppers. I added a little horseradish sauce while my husband preferred deli mustard. Hearty and delish!!

Double Layer Pumpkin Cheesecake

I substituted fresh roasted pumpkin for the canned and it turned out fabulous. I also used a home made vanilla and cinnamon spice whipped cream. It was a HUGE hit! I will make this again on Thanksgiving for sure.

Banana Crumb Muffins

Iced Pumpkin Cookies

Moist, chewy and delicious! I would avoid storing in an airtight container, however. Mine got a bit mushy by the next day. Without the icing they may have stored better.

Artichoke Spinach Lasagna

This was a great option for vegetarian lasagna! I have never had the artichoke and feta additions to one before and it turned out very flavorful! Will definitely make this again.

Cooked Pumpkin

I didn't cut up the pumpkin until after cooking. It was very easy to cut at that point. I pierced it with a fork several times and then roasted for an hour. The stem came out easily with a pull. I mashed the pumpkin and used it for pumpkin bread and pumpkin cheese cake. Next time I will puree it to get a smoother texture.

Eggplant Sandwiches

My husband and I loved this sandwich! The tips for preparing the eggplant were very helpful. We peeled, sliced and salted the eggplant and let it sit for about an hour. Then we rinsed and patted it dry before lightly brushing the olive oil onto the slices and broiling them. I added creamy goat cheese instead of feta to mine and it was amazing! Also, one comment suggested briefly sauteing the garlic before adding it to the mayo. I tried this and it was a great flavor! Can't wait to make this again...maybe with fresh mozzarella!

Zucchini Herb Casserole

Delicious serving option for zucchini! My husband doesn't care for super cheesy food and it was super easy to accommodate that by adding less cheese on top to half of the casserole. Even the kids enjoyed this. Can't wait to make it again.

Chicken Breasts in Caper Cream Sauce

Very tasty and quick! I love lemon piccata and this is a faster way to incorporate all the same flavors. I added a squeeze of fresh lemon on the cooked chicken and it made the flavor really pop! Nice go to for a week-day dinner!

French Veggie Loaf

This is delicious as is and was a big hit with my husband and kids, even my two picky toddlers! It is kind of quiche-like and eggy and would be great for a brunch. I can't wait to experiment with different veggie combinations!

Russian Tea

Reminds me of my childhood! My mother used to make this for us every year when the weather started to cool. I like all-spice and nutmeg in place of ground cloves. And I added a little more of the Tang. Delish!

Smashed Cauliflower Side Dish

Great way to prepare cauliflower! I did substitute garlic salt for fresh garlic in the interest of time, but it was a bit salty. Next time I will either omit the regular salt or go for the fresh garlic. A real crowd pleaser with my family!

Turkey and Quinoa Meatloaf

This meatloaf is very moist and my family loved it! I was skeptical because meatloaf doesn't have the best reputation. But I had ground turkey that I needed to use and I am so glad I tried this recipe. It was such a hit I will be making it regularly. I think I am going to attempt a sauce or gravy to accompany it and serve over mashed potatoes as well.

Orange, Honey and Soy Chicken

This was a big hit with my family, even my pickiest eaters! I used leftover meat from a roast chicken and fresh garlic and it still turned out great. Definitely needed a side of veggies to make it a complete meal. This was quick and easy and will be a regular at our house!

Easy Tuna Patties

I'm not a huge fan of canned tuna, but my family and I are trying more vegetarian options and tuna seemed inevitable. Surprisingly, everyone really enjoyed these patties! I ate mine more like a crab cake; with fresh lemon and cocktail sauce. Where as my husband and kids ate them like sliders; on fresh rolls with lettuce, tomato, onion, and mayo. None the less, this is a delicious and healthful meat-free meal option. We will make this again for sure!

Quinoa Black Bean Burgers

This burger was good and with all the traditional burger toppings, it was very flavorful and filling. However, the black bean flavor just dominates the dish. Not something I could cook very often, but a nice alternative to a beef burger.

Vegetarian Chickpea Sandwich Filling

This was a fresh, light sandwich filling akin to a tuna salad. Even my kids ate these sandwiches without a second thought. It is a nice base and you can easily customize it with veggies and toppings you like.
