Artichoke Spinach Lasagna

This was a great option for vegetarian lasagna! I have never had the artichoke and feta additions to one before and it turned out very flavorful! Will definitely make this again.

Hearty Vegetable Lasagna

This was a good tasting dish, but I think it needed more vegetables. Next time I will probably add some zucchini, eggplant and/or spinach.

Cooked Pumpkin

I didn't cut up the pumpkin until after cooking. It was very easy to cut at that point. I pierced it with a fork several times and then roasted for an hour. The stem came out easily with a pull. I mashed the pumpkin and used it for pumpkin bread and pumpkin cheese cake. Next time I will puree it to get a smoother texture.

Russian Tea

Reminds me of my childhood! My mother used to make this for us every year when the weather started to cool. I like all-spice and nutmeg in place of ground cloves. And I added a little more of the Tang. Delish!

Banana Crumb Muffins

Jordan Marsh Style Blueberry Muffins

Very tasty muffins! My oven is a little touchy, but the cook time was WAY off for me. They were almost burnt after 15 minutes. Other than that, I followed the recipe exactly as written and got a great result!

Vegetarian Chickpea Sandwich Filling

This was a fresh, light sandwich filling akin to a tuna salad. Even my kids ate these sandwiches without a second thought. It is a nice base and you can easily customize it with veggies and toppings you like.

Eggplant Sandwiches

My husband and I loved this sandwich! The tips for preparing the eggplant were very helpful. We peeled, sliced and salted the eggplant and let it sit for about an hour. Then we rinsed and patted it dry before lightly brushing the olive oil onto the slices and broiling them. I added creamy goat cheese instead of feta to mine and it was amazing! Also, one comment suggested briefly sauteing the garlic before adding it to the mayo. I tried this and it was a great flavor! Can't wait to make this again...maybe with fresh mozzarella!

Rich and Creamy Potatoes Au Gratin

These potatoes are probably the best au gratin I've ever made! The smokiness of the Gruyere really adds a unique dimension to the flavor. I chose to leave the peel on the Yukon Golds and I used a food processor to both slice the potatoes and shred the cheese. I suggest doing this to make the prep time significantly shortened. Also, I reheated the leftovers for breakfast and served runny eggs over them. It was an amazing combo and made breakfast feel gourmet and my husband feel spoiled.

Kalbi (Korean BBQ Short Ribs)

I made this for an appetizer party and it was easily the star! The marinade was quick and easy to prepare. I opted for the baking and broiling method recommended by another user. It also was very simple and fast to complete. Finally, I reduced the marinade and used it as a dipping sauce. TO DIE FOR!!

Broiled Tilapia Parmesan

This tilapia preparation was amazing! It was easy and quick to prepare and cook. And the ingredients were something I usually have on hand. The fish was tender and flavorful. Everyone in the family wished I had made a double batch. Definitely going to be a regular on our rotation.

Asian Orange Chicken

This recipe turned out fabulously! In fact, I had to make it two days in a row at the request of my four daughters. In my opinion, a lengthy marinade time isn't necessary. The flavor in the sauce is plenty.

Chicken Enchiladas II

Zucchini Herb Casserole

Delicious serving option for zucchini! My husband doesn't care for super cheesy food and it was super easy to accommodate that by adding less cheese on top to half of the casserole. Even the kids enjoyed this. Can't wait to make it again.

French Veggie Loaf

This is delicious as is and was a big hit with my husband and kids, even my two picky toddlers! It is kind of quiche-like and eggy and would be great for a brunch. I can't wait to experiment with different veggie combinations!
