Sunshine's Company Potatoes

These are excellent and I make them every year for Thanksgiving and Christmas. Its a great make ahead recipe for the holidays, just pop them in the oven the next day. I sprinkled shredded cheese on top to give it some gooey, cheesy flavor. Not very low fat or healthy, but YUMMY nonetheless!

Three Bean Salad I

This salad was excellent and I received raves when I served it on Christmas with roast beef. The leftovers were still tasty days later. It was EASY to make, with not a lot of chopping. Next time, I will cut the sugar, vinegar, and oil down to a half cup because it seemed to make to much liquid.

Baked Corn

I made this for Christmas because of all the wonderful reviews it received. It was just okay. I will try making again with less butter (a little greasy) and in a smaller pan so it would be thicker (it was very thin.)

Corn and Black Bean Salad

This was a big hit at a "Mexican pot luck." I double the recipe, using three cans of beans and two cans of corn. I also added one red bell pepper and half a purple onion as others suggested. Others noted that it was a little sweet, so I eliminated the sugar. It was yummy!

Lubia Polo (Green Bean Rice)

It didn't hold the shape when I turned the pot over, but it was EXCELLENT, nonetheless. I will make this again and use less water for the rice to make it firmer.

Chicken Pot Pie I

I gave it four stars instead of five because of the changes needed as suggested, but it is YUMMY! I'm making this for Christmas dinner because it is so easy and can be made ahead. I made the following changes as suggested by some: 1. used refridgerated pie crust and baked bottom crust for 10 minutes, brushed with beaten egg 2. used one pound bag of frozen stew veggies that had potatoes and brocolli 3. added 1 tsp. thyme, 1/2 tsp. tarragon, 1 tsp. pepper Enjoy!

Kielbasa Kale Stew

This is excellent and perfect for a cold winter afternoon. It's not the easiest thing in the world to make, I find chopping all the kale a makes a big mess and draining the potato water and saving it is very difficult. Its worth all the work and we make several times each winter.

Creamy Pasta Bake

Not very original, but decent comfort food. It is easy, inexpensive, and tasty. I have taken this to several potluck lunches and not taken home leftovers. I usually add a pound of browned ground beef or sausage. Shredde mozzerela is also good melted on top.

Honey Mustard BBQ Pork Chops

I used this recipe to marinated thick boneless pork chops. Add 2 tsp. of olive oil into marinade and sauted the chops in a preheated pan on the stovetop. Excellent! The leftover sauce was good on rice.

Ultimate French Toast

Great recipe! Tasty, fast and easy to make and fast and easy to clean up. I double the amount of milk so it wouldn't be so eggy and added 1 tsp. of vanilla as others suggested. I also added 1 tbsp. of sugar to sweeten it up a bit. Will make again!

Sesame Seed Veggie Salad

I made this salad for a Fat Tuesday pot luck. Everyone loved it! It went well with the jambalaya. The only change would be use 1.5-2 lbs. green beans and double the oil and vinegar in the dressing. YUMMY!

Shepherd's Pie VI

I made this for a St. Patrick's Day dinner group and everyone raved about it! I will make this again! I made a few changes as others suggested: added worchestire sauce, more ketchup, a package of gravy mix (and kept the flour), and used a 1 lb. bag of frozen peas and carrots rather than fresh/mashed carrots! It was tasty, tasty! Will make again.

Black Bean Lasagna

This is a tasty, healthy and economical family meal. We loved it! I used 2 cups cottage cheese mixed with 2 beaten eggs instead of gaucamole. It gave the dish a nice, creamy texture and flavor without the cost and trouble of the avocados. Will definitely make again!

Curried Chicken and Brown Rice Casserole

This was great! The entire family enjoyed it...this one is a keeper. My husband, who is definitely not a cook, made this for dinner and said it was "so easy, even I could do it." I did feel it was a little sweet, next time we will add some frozen peas before it goes into the oven.

Delicious Black Bean Burritos

These are everything I look for in a family meal--quick, tasty, inexpensive, and nutrious. To make this go a little farther, I add 1 cup frozen corn and 1 cup salsa. I also used whole wheat tortillas. We make these again and again. YUMMY!

Italian Riboletta Soup

This was tasty and fairly simple, a great family meal. Nutritous, yummy, and inexpensive to make. Made six very hearty servings with leftovers. I changed the recipe slightly: omitted the celery and fresh parsley (didn't have it), used half small head of cabbage, two chopped carrots, and one can great northern beans and one can dark red kidney beans, and added three links hot Italian sausage which I browned with the onions. This is a keeper!
