Pumpkin Pie Spice II

I have used this recipe for years for pumpkin bread, pumpkin cheesecake, and all yummy things pumpkin. Much less expensive than buying the premade spice. I substitute allspice for the clove because I don't ground clove on hand. Works perfectly. Thanks for sharing!

Holiday Pumpkin Cake with Rum-Cream Cheese Glaze

This review is for the glaze...yummy! The perfect topping for a pumpkin cake. I made this in a glass bowl, sitting on top of a small pot of simmering water. Stirred with a hand blender for a smooth consistency. The only thing I would change is two tablespoons of milk, this is a bit thick. THANK YOU for sharing!

Two Ingredient Pumpkin Cake

So simple and great reviews? How can this be? I added two eggs as other suggested, but other than that followed the recipe. So moist and tasty. Baked in a bundt pan and baked 45 minutes. Topped with a cream cheese glaze from this site. Excellent!

Ginger Glazed Mahi Mahi

A quick and tasty marinade for mahi mahi. The balsamic vinegar added a little extra sweetness. I could see this working well with chicken, salmon, or boneless pork chops. Thanks for sharing, we will make this again!

Quinoa Veggie Salad with Zesty Vinaigrette

I'm trying to use more quinoa in our family's diet because it is such a healthy whole grain and I am always trying new recipes I find here on allrecipes.com. This is my new favorite! The dressing is what makes it, so take the extra time to shake of the ingredients in a mustard jar. I add diced carrots and celery, just because I had them and a cup of frozen corn for color. I omitted the olives because I don't care for them. This was so tasty! Thank you for sharing!

Best Buttercream Frosting

I wanted to love this frosting after reading all the great reviews, but, alas, did not. I took others' advice and cooked the flour/milk into a thick paste (low heat, lots and lots of stirring) and beat the sugar and butter for 15 minutes. The flavor was fantastic, but the frosting had definite texture issues. had clumps of flour from the cooking that did beat out as I had hope and it was a bit greasy and "loose." It did not hold up well on cupcakes. Will probably not make this again. Still looking for the perfect white frosting for chocolate cupcakes.

Pat's Baked Beans

The flavor and texture of these beans were incredible! I omitted the bacon (to make them vegetarian) and cooked them in a crockpot. There was a quite a bit of "sauce" so I added another can of black beans. I will make these again and again!

Slow Cooker Pulled Pork

Like others, I was skeptical about cooking with root beer...smell? mess? flavor? No problems! I used a less expensive cut of pork and it was so moist. It was about five-six pounds and took over eight hours to cook. Used it with Western North Carolins Vinegar Barbeque Sauce from this site. Excellent! And oh, so easy. This will be a regular dish in our home. Served it with Creamy Spiced Coleslaw also from this site. Thank you for sharing!

Creamy Spiced Coleslaw

Yummers! I used one small head of cabbage which I salted and rested in a strainer to shed out some the moisture. Rinsed the cabbage and spun it through the salad spinner. Used two carrots (shredded) and one small onion (finely minced), omitted the salt and onion powder. This was the best cole slaw I have ever made. Thank you for sharing.

Peanut Butter Noodles

Made these noodle with whole wheat spaghetti and served with Cucumber Sunomo salad from this site for a quick and tasty, meatless meal. I used natural peanut butter, soy I may use a bit more honey next time. Also, its a bit salty with all the soy sauce so I will use just water to replace the chicken broth. Otherwise, Excellent! This will be in our regular rotation for dinner!

Spinach and Potato Frittata

Refreshing Summer Orzo Salad

This was an excellent, refreshing side dish! Made this salad to go with salmon and a tossed green salad. Skipped the pine nuts and the olives, since I didn't have them and don't care for them. I used the juice of one whole lemon and used only 6 oz. of feta (12 oz. seemed a bit much). Also, I used 3 oz. of capers.

Suki's Spinach and Feta Pasta

I have made this several times and for a quick and easy meal I give this a five. A great dish to put together after a trip to Costco for the feta and fresh spinach. I used one can of diced tomatoes to replace the fresh ones since the tomatoes are currently out of season. Thanks for sharing!

Beef Fried Rice

I used lean ground beef and browned it with sesame oil and the onion and added green pepper and chopped carrots. Also added frozen peas in the last step. The whole family enjoyed this meal. Will definitely make again.
