Greek Chicken

Halved the recipe but left the sauce quantities the same. Used Kalamata olives (husband and I are both big fans) and feta cheese. Don't worry too much over the toothpicks---the feta doesn't melt like cheddar or mozzarella would and the filling stayed mostly within my not-too-well pounded and very erratically shaped chicken breasts. Absolutely delicious. A+. Will try next time with blue cheese.

Cauliflower with Dijon Sauce

I cut down on the mayo (and used low fat) and much less cheddar and it was still delicious even though it wasn't swimming in sauce as I imagine it would have been. Husband and I both loved it!

Thai Chicken Pizza with Carrots and Cilantro

I loved this, but my husband found it too spicy, due to the peanut sauce I used. I boiled the chicken breasts and pulled it apart and it worked fine. Very different and delicious!

Maple Salmon

Made this recipe as written. It was a wonderful change from our usual salmon (using Chef Paul Prudhomme's Blackened Redfish Magic-try it!) Maple, soy and salmon go together perfectly!

Carrot and Ginger Soup

Very subtle flavor-next time I would use more garlic and/or onion. Seems like we had to add a lot of salt/pepper. But it was a nice flavor and very different. My old blender did a fine job of pureeing the ginger, by the way.

Chicken-Stuffed Shells with Sherry Sauce

Delicious! I did use all of the reserved liquid from the mushrooms and chicken and ended up using more Gruyere to thicken up the sauce. I was advised by the "cheese lady" at my supermarket to use the Gruyere as it has a distinctive taste and melts well-I'm glad I did as it turned out perfectly!

Crab Quiche II

This was a little sweet for our tastes. Substituting sour cream for the mayo and adding some green onion might help it. I think the imitation crab has a certain sweetness to it, so would use real crab or at least a combination of real and fake next time.

Grilled Salmon With Orange Glaze

My husband and I have salmon about once a week and I was looking for a different way of serving it from our usual. I followed the recipe exactly (except I ran short of white vinegar and had to use about half cider vinegar) and it was SUPERB!!! I will make this again and again and will definitely serve it to company!
