Chicken Pot Pie I

I was really rather surprised at how well this very simple recipe worked out. Admittedly, I didn't follow the ingredients exactly, but that was just because I wanted my choice of fresh vegetables instead of canned or frozen veggies. I was impressed that this pot pie was hearty without being heavy. Other talked of adding extra cans of soup or adding milk, but I was happy with the lightness. Everyone will have to tweak to his or her liking, of course. I do think that four chicken breast halves is about one too many, at least for the size dish I was using. Also, it is worth noting that you'll probably want to partially cook slow cooking veggies such as potatoes, carrots, or squash before you put them in the pot pie and bake it. I think the biggest appeal of this dish is its simplicity, both in having the "comfort" quality in its ingestion, and its easy preparation. When I prepare this in the future I plan on adding a bit more black pepper and maybe some cumin. I hope others will try this and enjoy it as well.

Bow Tie Pasta with Sausage and Sweet Peppers

I hope you like sausage and peppers, because obviously there's not much else to this dish. I used penne pasta in place of farfalle and instead chunked up some ground Italian sausage rather than cutting up links since my local grocery store was having a sale. I also added a bit of onion and garlic in hope of increasing the flavor intensity and complexity. While that helped a little bit, I'm just not terribly impressed with this dish. I felt like the quantity of pepper and sausage was just too high for the amount of pasta suggested, and also, while the sausage, pepper, and beef broth combination is termed a sauce, it doesn't eat like one. I see at least one reviewer enjoys this recipe by tweaking it with a can of diced tomatoes. Seems like the right direction anyway.

Melt-in-Your-Mouth Broiled Salmon

I modified this recipe to include more garlic (I enjoy garlic a lot), omit the dill (I don't like dill), and use just parsley instead of all the herbs in fines herbes (I didn't feel like spending a bundle). Admittedly, I don't have the most sensitive palate, but I wouldn't have been able to tell you that the wine or Worcestershire sauce were part of the flavor profile. Perfectly fine fish, though.

Alyson's Broccoli Salad

If you're like me (not the biggest fan of mayonnaise), this was a bit heavy on the mayo. I would recommend toning that back a tad, as well as lowering the amount of sunflower seeds - it felt more like sunflower seed salad as opposed to broccoli salad. I didn't use fresh grapes as opposed to raisins, but I'd bet that's an improvement.
