Son of Eastern NC. I have lived near the coast most of my life. I love a good meal with great wine and family or close friends.
My favorite things to cook
Cajun inspired cuisine. I have long considered Paul Prudhomme to be my culinary hero.
My favorite family cooking traditions
Most every meal was homegrown, whether produce or meat. One of my fondest food memories is of my great grandmother reheating collards in a cast iron skillet and adding tomatoes.
My cooking triumphs
I have done some catering, but the honor of being asked to prepare several meals for friends who were entertaining, that was worth more than money. I love to entertain, I love to watch people enjoy good food.
My cooking tragedies
Still working on baking bread! Cooking is pure art, but baking... that is a science.

Lemon Chicken Piccata
I made this recipe was it was written, just adding marinated tomatoes as a tasty garnish. I served it with portabella mushroom tortellini with fresh pesto. My fiancee proclaimed it "5 star! One of the best meals you have prepared!"

Bubba's Jambalaya
I cooked this recipe "as is" and it turned out great! I know some expressed concern over the rice sticking to the pot. I have cooked jambalaya quite a few times. I always stir it from the bottom a few minutes after adding the rice. It never really presents a problem unless the heat is too high. Highly recommend this recipe!
