I loved these as a child but I have hated making them as an adult because of the sticky mess when rolling them into balls. So last year, instead of rolling them, I pressed the mixture into a greased baking dish. I then sprinkled the top with coconut and pressed it lightly into the mixture. I let it cool and then cut into bars. Much easier and just as tasty!

Campbell's Kitchen Creamy Chicken Enchiladas

Okay, so these aren't authentic enchiladas but with Cream of Chicken soup in them, you wouldn't expect them to be. They do, however, have a nice Mexican flavor to them but they are mild enough for the whole family to enjoy -- I use about half the chili powder because I have young kids. They are also creamy enough to qualify as comfort food. Overall, this is an easy, yummy recipe. You can even make up the filling and the topping in advance for a quick weeknight meal.

Chicken Vesuvio

This was a good recipe, though it didn't have the prettiest presentation. It was very light and flavorful, though heavy on the lemon. After reading other reviews, I was liberal with the salt and pepper and it came out fine.

Broccoli Chicken Divan

I was pretty disappointed when I tried this recipe. It was easy and edible, but it was just plain boring. For a quick weeknight dinner, it's okay, but it's nothing special.

Baked Omelet Squares

This is the best breakfast casserole I have ever made! I used tomatoes, mushrooms, and ham and it was wonderful. It was also easy to adapt for individual tastes. My sister, who was going to be eating it, doesn't like mushrooms so I just left mushrooms out of one corner of the casserole. It worked perfectly.

Summerly Squash

This was a delicious side dish! I made the following changes and it still worked wonderfully: I ommitted the onion but instead used about a teaspoon of freshly minced garlic, I didn't have fresh bay leaves, so I used a half teaspoon of dried bay leaves, finally, I added more salt to taste after stirring in the zucchini and squash. It was fantastic!

Baked Ziti I

This is a wonderful recipe, both delicious and simple to make. The only change I made was to lightly sprinkle the cheese layers with garlic salt for an added bit of flavor.

Cherry Cheesecake Pie

This is a wonderful and simple recipe. However, for a firmer filling, reduce lemon juice to 1/3 cup and beat the cream cheese while still firm (do not soften). This is the way I have prepared this recipe for years and it turns out beautifully and delicious every time.
