Chicken Enchilada Dip

2 slight modifications. Used 1/2 mayo and 1/2 sour cream like many other posters suggested. Also used 1/2 cheddar and 1/2 Monterey jack cheese. Made it twice in 1 week for 2 different pot lucks and it was the first dish gone both times. Everyone loved it from ages 8 to 80. Might just be my new #1 dish to pass.

My-Hop Pancakes

Followed the recipie as written and they were wonderful. I added some cooking spray to my griddle and had no problem with them "sticking." Made 11 nicely sized pancakes. Next time I will double the recipie.

Slow Cooker Chicken and Dumplings

Hubby loved it. Few modifications. Used chicken stock instead of water and seasoned with garlic salt and pepper. Cut my pillsbury grands in 4 strips using my pizza cutter and a bit of flour on my cutting board. Took 90 minutes for bisquits to cook on high setting. Added 1 can of drained peas, paprika and parsley 5 minutes before serving. I was worried that the mixture looked a bit "soupy" before adding my bisquits but it thickened up nicely. So easy!!!

No Bake Double Good Dessert

Father in law said it was one of the best desserts he ever had. I read many of the reviews and decided to make a few of the most popluar suggested adjustments. Added 3 tablespoons of butter to the crust and put it in the freezer for 15 minutes. Added a tablespoon of vanilla to the batter and used 1 cup of powdered sugar instead of 2. Added chocolate syrup over the top. Ending up looking just like the picture above. So easy and so good!!

Delicious Ham and Potato Soup

Easy and fast. I started it at 2:15 and we were eating by 3:00. Made a few modifications. Substituted 1 cup chicken stock instead of water. I also used 1/2 less milk as we prefer our soups thick. I also added some pepper and onion salt to the roux. Can't wait to make it again!

Creamy Chicken Tortilla Bake

Only modification I made was I baked at 350 degrees for 40 minutes and that was just to ensure the tortilla's were crispy. Easy, inexpensive and very tasty. My husband said to add it to our regular rotation.

Easy Honey Mustard Mozzarella Chicken

Great reciepe. Only modification I made was I pre-cooked the bacon in the microwave for 2 minutes. Didn't want the chicken to overcook while waiting for the bacon to cook. Served it with homaade potato salad and fresh green beans. Great Sunday dinner.
