Mom's Sushi Rice

This rice was delicious. I followed the directions exactly and it came out perfect. I washed the rice about 4 times, rubbing it hard between my hands. I was able to get the sugar and salt to dissolve in the vinegar without heating it - but I did whisk it really well for a few minutes - it may have been easier to heat it up :) It was a great consistency for the sushi. It was really sticky (make sure you wet your hands when using it) and tasted like sushi from a restaurant. I found the flavors to be just perfect - not too sweet or vinegary. I did let it cool completely before using it. This will definitely be our go-to sushi rice recipe.

Sopapilla Cheesecake Pie

I made this for a dinner with my in-laws and everyone loved it. I didn't know if it was 5-star worthy (maybe 4 1/2) - but the others were really raving about it. I used reduced fat crescent rolls and 1/3 less fat cream cheese and they turned out great. I also reduced the sugar as suggested by others. I used 3/4 cup in the filling and 1/2 cup over the top. I have a huge sweet tooth and probably would have been fine with the amount in the original recipe - but they were plenty sweet. I did cook it a little longer - maybe 5 minutes. Rather than dolloping the butter on top before baking, I spread it out. When I took it out of the oven, the butter was pooling a bit but by the time it cooled it was fine. They are equally good after being refrigerator (I think I may prefer them that way!).

Southwestern Turkey Soup

This soup was excellent! My husband loved it with just a bit of shredded cheese on top. I cooled the spice off a bit with some sour cream and cheese - very tasty! I followed the recipe exactly (almost). I used homemade turkey broth rather than the vegetable broth because I prefer the flavor. I also used fresh cilantro. Other than that - I didn't make any changes. Next time I will add some black beans just for a bit of variety. Definitely a keeper - this will be a day after Thanksgiving tradition in our house.

Best Big, Fat, Chewy Chocolate Chip Cookie

I am really surprised that these cookies received such rave reviews! I made these cookies exactly as instructed (except I only used 1c of chocolate chips). The texture was perfectly fine...nice and chewy. I don't know why other people had trouble. I only cooked them for 15 minutes so they were a bit gooey when the came out but were good after they cooled. The problem was the taste. They were way too sweet and that is saying a lot coming from me! I have a huge sweet tooth. And they did have a rather odd flavor, perhaps from all the vanilla as someone else suggested. Anyway, they are ok, but certainly don't deserve that many five-star ratings.

Basic Microwave Risotto

I was very skeptical when I saw this recipe. But it really surprised me - the flavor was really good and the rice actually cooked up well (I assumed it would be really crunchy). However, this didn't turn out as creamy as old fashioned risotto. I left the lid on for the last 10 minutes - not sure if that made a difference. The recipe didn't specify what to do. It is definitely a good way to easily make risotto, just don't expect it to taste exactly like it does with the regular method.

Homesteader Cornbread

This is by far the BEST cornbread I have ever eaten. It is very moist with the perfect amount of sugar. I have a huge sweet tooth but my husband doesn't - and we both loved this cornbread. I have never written a comment on this site - but I felt that this recipe deserved it. If you are like me and have never liked cornbread because it is too dry and bland then you will LOVE this cornbread. I followed the recipe exactly and it turned out perfect.
