Chocolate Chip Pancakes

I make pancakes almost every weekend for my boys and couldn't quite remember my regular chocolate chip recipe. Saw this and modified it with what I remember from my usual: 1 1/2 cups flour instead of just 1, 2 Tblsp. brown sugar in place of white, and 2 Tblsp. melted butter instead of oil. The boys said these were the best ever and ate them all!

Pineapple Banana Bread

Excellent bread! I have a few changes: I cut back the sugar to 1 1/2 cups. I make the flour 1/2 white and 1/2 wheat. Sometimes I use mandarin oranges instead of pineapple; either way I reserve the juice and then add just enough oil to make the 1 1/4 cups. Sometimes I add cinnamon chips (I order directly from Hershey) and/or coconut to the mix to make the bread even more tropical. Thanks for the recipe!

Honey Oatmeal Bread II

My husband hates oats, but he needs to figure out a way to get them in his diet. I have tried all sorts of things, including pulverizing oats so they look like flour, but he still hates them. He loves this bread! My modifications: 2 packages yeast, over 6 cups flour (half wheat), left off the honey/oats topping, and baked at 350 for 45 minutes. It came out great, and my boys loved helping me knead. Thanks, Leslie!

Oven Fried Chicken II

The first two times I followed this recipe, the chicken tasted a little too greasy for us. I decided to give it one last try and substituted 1/2 cup butter for the oil. I also add a little milk to the beaten egg. It turned out delicious this time. We'll definitely make it again!

Turkey Jambalaya

I make this meal for my family all the time, and we love it! Because I don't like spicy food, I make a few substitutions: 1. smoked sausage for the hot turkey sausage 2. Mexican-style diced tomatoes instead of the Italian style 3. 2 teaspoons Italian seasoning instead of the Cajun seasoning If I don't have Mexican-style diced tomatoes, then I use the Italian-style tomatoes and just cut back on the Cajun seasoning. This is great comfort food, and it is also great for those times when your husband calls you on the way home from work to mention that he invited a friend for dinner. I can have it simmering by the time they arrive, and I always get compliments.

Aunt Teresa's Chicken

My family hated this recipe. My husband's comment: "Considering the chicken cooked all this time in the sauce, you would think it would have some flavor." My serving of chicken was so tough and stringy I had to use a steak knife to cut it. We won't make this again.
