Zesty Tuna Salad

As written, I give this recipe 3 stars. However, it's a good jumping off point. The ingredients all work together, the quantities just aren't enough. I can see why others say this is dry. I added more mayo, Dijon, and relish (don't know how much, I just eyeball it) and used green onions. Made a great tuna sandwich.

Mom's Zucchini Bread

Wow! I did want to make this lower fat so I did half oil, half unsweetened applesauce. I also substituted 1/2 cup of the white sugar for brown sugar. And I didn't measure the zucchini, just shredded two of them. So good. Best I've ever made.

Special Buttercream Frosting

FANTASTIC! Wonderful basic recipe. I doubled it to frost a 9" round layer cake and had some left over. Used 1/2 shortening and 1/2 butter for a richer flavor. Also, because I was using this to frost the Lemon Chiffon Cake from this site, I used 1 1/2 teaspoons of lemon extract instead of vanilla.

Lemon Chiffon Cake

I got so many compliments on this cake (made it for a bridal shower). The only change I made was to add 1 teaspoon of lemon extract to the batter and bake it in 2 9" round pans. I did find the cook time too much. I cooked it for about 20-25 minutes. Topped this with the Special Buttercream Frosting from this site (but added lemon extract to the frosting too).

Peach Cobbler II

Wow! That's all I can say. I did follow a couple other reviews by cutting the sugar in the peaches to 1 cup and using 7 peaches instead of 3. I also cut the water to 1 cup and made it in a 9x13 pan. Perfect.

Connie's Zucchini "Crab" Cakes

These are good. I would never mistake them for crab cakes but a nice vegetarian option. Also a great way to use up the zucchini coming from the garden. I made the recipe exactly as it's written except that I baked them (350 for 15 min. each side) for a healthier approach. I also forgot to dredge them in flour first but they were fine.

Blueberry Zucchini Bread

Made 2 loafs with the one recipe. Also made it healthier by doing half wheat flour, half white. Cut the sugar to 1 1/2 cups and used applesauce instead of oil. Great way to use the zucchini from the garden

Strawberry/Rhubarb Crumb Pie

I will never make double crust strawberry rhubarb pie again. The topping was delightfully crunchy. I did make a slight change to the recipe because of all the reviews talking about runniness. I omitted the egg and added about 2 Tbsp of cornstarch to the filling. I also scaled back the sugar by about 1/3 cup. Absolutley delicious.

Spinach Quiche

Made it this morning for brunch. It was great. I left out the mushrooms and prebaked the crust so it wouldn't get soggy. Other than that, didn't change a thing. Lots of people said it made enough for two quiches but it made one deep dish pie pan perfectly.

Quick Lemon Dijon Chicken

Update: I started with giving this a 4 but now after making it a couple more times, I'm upgrading to a 5. This is so easy and the chicken comes out so tender. *** Past review:I liked this. A couple reviewers said it wasn't that mustardy but it was but I love mustard so it was ok. I put extra lemon in it because I love lemon and I left out the lime. I love how quick it is so I'll be making this over and over.

Flourless Chocolate Cake I

This was good. Fairly easy to make. It had a liquid center though and I would have liked it to firm up just a bit more so maybe need to bake it longer. When I put it in the fridge, it firmed up and could heat it up to get it back to the original consistency.

Double Tomato Bruschetta

Delicious Raspberry Oatmeal Cookie Bars

Pretty good. Made them for my sister's tea party bridal shower last year. Double the raspberry jam in the middle though. There was hardly any in there and you couldn't really taste raspberry.

Best Fried Green Tomatoes

My siter and I grew up watching the movie "Fried Green Tomatoes" and always wanted to try them. We live in Southern California so they aren't popular here but we found them at a local restaurant when we were kids and loved them. Now, when I can get green tomatoes at our farmer's market, this is the recipe I use to make them. I've even made these and gotten a 5 year old to like them. That's saying something.

Candied Sweet Potatoes

Good flavor but there was way too much liquid in the pan. When I put the marshmallows on top, they melted into the liquid and we missed out on the crunchy marshmallow top which is my favorite.
