Slow Cooker Thai Pork with Peppers

Wow! So good! I will be making this again for sure! My bell peppers went bad in the heat we were having before I made this so I made it without. And I used crunchy peanut butter vs. creamy because it's all I had. This was fabulous!!!

Thai Cucumber Salad

Pretty good. At first bite, I was unsure but the more bites I took, the more I liked it. I only put 1 jalapeno in because my family doesn't like spicy but I think I could have done both and been ok.

Coconut Cake III

WOW! WOW! WOW! WOW! WOW! My new favorite cake. I added 2 tsp coconut extract to the cake batter and left out the walnuts. Do not just toast the coconut in the oven. Browning it in the butter makes a difference. This is worth 20 stars!

Double Layer Pumpkin Cheesecake

I'm not a huge pumpkin pie or cheesecake person but I will eat this. And this is the recipe my sister requests EVERY thanksgiving and Christmas. Perfect the way it is although I did make it once with a little more pumpkin in it.

Pumpkin Pancakes

Delicious!! Made them as is except I added a teaspoon of vanilla and about 1/4 cup more pumpkin because some of the reviews said they didn't taste much pumpkin.

Cinnamon Ice Cream

This is amazing. I didn't think I would like it that much because cinnamon ice cream didn't sound appealing. But I trusted the great reviews and now I'm convinced. I served this over peach cobbler and tonight I'll be serving it over strawberry rhubarb pie.

Kickin' Collard Greens

These are great! Taste just like the ones I used to eat when I lived in Kentucky. Made a couple of slight changes based on other reviews and personal preference: doubled the bacon but drained off all but maybe 2 Tbsp of the grease before adding the onion. Doubled the garlic and added a bit of honey and a splash of vinegar.

Winter Lentil Vegetable Soup

This is very good and pretty simple to make. I made a few slight changes - I doubled the chicken broth because I don't think there was enough liquid. I also added 3 garlic cloves and zucchini. Delicious.

White Almond Wedding Cake

Wow so good! Made this today for my sister's birthday and so perfect. So moist and flavorful. I could just eat the cake without the frosting or anything. This is going to become one of my go-to recipes. **Update 10/16/10 - Made this cake again and I filled it with a combination of raspberry preserves mixed with raspberry jello. Frosted it with the Special Buttercream Frosting from this site.

Savory Turkey Gravy

Fantastic gravy! My mom tasted this and said - "You really made this! It must have been hard" The only differences I made were to use the drippings from the turkey and supplement chicken broth because I didn't have turkey stock. Also left out the water and used chicken broth.

Roasted Brussels Sprouts

Never had brussel sprouts before and these were great. THe more I ate, the more I liked them. The only difference I made was I added 3 cloves of minced garlic to the bag when shaking them up. Perfect!

Peppermint Patties

So easy to make and taste just like the ones bought in the store. Had to refrigerate them to get them to completely harden after dipping in chocolate. Ended up being a huge hit for Christmas last year and they are on my list to make this year.

Baby Blue Punch

I give 5 stars for the idea because I really wanted to do a blue punch for a boy baby shower. However, I couldn't find blue Kool Aid or white cranberry juice so I used blue Hawaiian punch and soda. It worked out and looked great.

Soft Sugar Cookies IV

These are great. Rolled them out and cut them into duck shapes for a baby shower. Used the Sugar Cookie Frosting (from this site) to outline the cookies in yellow and then used Sugar Cookie Icing (from this site) to fill them in. They were a hit at the baby shower.

Sugar Cookie Icing

This was great once I got it to the right consistency. I quadrupled this recipe because I had to ice 60 cookies. However, I had to add A LOT more corn syrup and milk to get this to a spreadable consistency. Don't know how much I added total but it ended up being over 1/4 cup of each. Worked great once I figured it out though.
