Kathy's Delicious Whole Slow Cooker Chicken

I tried this recipe a couple months ago after receiving my first slow cooker. My husband really enjoyed it and asks me to make it quite often. I have a hard time trying to describe the taste of it but it comes out so tender and flavorful. I serve it with white rice which absorbs the sauce nicely. I have even made this chicken without some of the ingredients like the lemon juice and chicken broth (didn't have them on hand) or using garlic powder rather than minced and it still turns out yummy!

Zesty Slow Cooker Chicken Barbecue

I made this yesterday using a whole chicken (just had to pull apart with forks and pick out the bones towards the end of the 4 hours on high). It was definitely tender and flavorful. I had to drain at about 3 hours in to ensure the sauce be thick since it was a bit watery for our taste. I used Bullseye BBQ sauce and Zesty italian dressing since that is what I had on hand. The Bullseye sauce is very bold so it was the dominant flavor. Maybe next time I will use a milder, less smokey sauce. Overall a tasty dish served pulled over rice and onions. Deep Fried Mushrooms

I tried a variation of this recipe tonight. I cut small white mushrooms in 4, dipped them in 2 beaten eggs, coated them lightly with cornstarch garlic powder salt mixture, fried them in corn oil. They turned out good! I fried them for a while until they turned slightly golden removed from oil and removed excess oil with papertowel. My dipping sauce was Marzetti brand, Southwest Ranch. Very good combination. I have tried other batters but I had made this batter the night before for general tao and thought it would work well for these mushrooms. I will try italian breadcrumbs next time.

No Bake Peanut Butter Pie

This pie was DELICIOUS! I am a huge Reese Peanut Butter Cups fan and this tasted just like it, maybe better. Everyone liked this pie and I have since made 4! It is inexpensive to make as well. I crushed up some peanut butter cups and mixed them in with the filling and also sprinkled some generously on top. I used graham cracker crust which was delicious. I only used half of the whipped topping (cool whip) called for and it seemed to be plenty. Can't say enough good things about this pie! Try it, you'll really enjoy it!
