I got a similar recipe from Weight Watchers in 2001, and I've been making it since then, and it's always well received. I like it because it's all pantry items and makes a large batch, sometimes impromptu. I make it w/2 cans of chicken, a jar of salsa, a carton of low sodium chicken broth, a can of black beans (rinsed and drained), and a can of low fat refried beans. Delicious and easy, but a bit high in salt, and it's all in cans, so not optimum nutrition, but high marks for ease, expense, and quantity. I always keep a stash of these ingredients on hand if I unexpectedly need/want to feed extra people.
