Chicken Something

This didn't turn out at all. It was way too salty and the rice didn't cook. I even cooked it for an extra 15 minutes just to be sure the rice cooked. It still didn't help. I will not be making this again.

Lemonade Pie III

This is a great summertime pie. I topped mine with sliced strawberries. It was wonderful. Next time, I'll do two layers strawberries and filling. I brushed melted butter on the pie crusts and baked for 8 minutes in a 350 degree oven. It came out very crispy.

Strawberry Spinach Salad I

This was a hit for Easter dinner. My mom took home the recipe. I toasted the poppy seeds, sesame seeds and almonds for more flavor. I decreased the sugar to 1/4 cup, but next time I will only use 1/8 cup. I used balsamic vinegar for an added kick. My dad can't have the poppy seeds or sesame seeds so I made a batch of dressing without them. It was still great.

Crispy Cucumbers and Tomatoes in Dill Dressing

This salad turned out great. It's a good way to use cucumbers and tomatoes. I used balsamic vinegar and olive oil plus I doubled the dill. I didn't add any red onions or sugar.

Baked Macaroni and Cheese I

This turned out fantastic. I made it for Easter dinner. I added an extra clove of garlic and about 12 oz of penne. There was plenty of cheese sauce to cover it all. I turned on the broiler for the last 5 minutes of baking to crisp the cheddar cheese on top.

Quick and Easy Lemon Pie

I made this for Easter dinner. It was a huge hit. Everyone really enjoyed it. I folded in about half of the Cool Whip. Then topped the pie with the rest. Let the pudding mixture cool before adding Cool Whip. I topped the pie with sliced strawberries and lemon zest. There was extra pie filling left over so I put it in dessert dishes as a parfait.

Pineapple Glaze for Ham

I used this glaze on a spiral sliced ham. It turned out wonderfully. The cherries ended up being candied in the process. Everyone kept eating them before I could even get the ham on the table. I made this for Easter dinner.

Caramel Popcorn

This is absolutely wonderful. I added a cup of peanuts to the popcorn before I poured on the caramel. It tastes great. Spray the pan with vegetable spraty to help prevent sticking.

B.L.T. Salad with Basil Mayo Dressing

This was a terrific salad. I didn't make croutons because my family is on the Atkins diet. I used grape tomatoes instead of cherry tomatoes. I topped the salad with grated Parmesean cheese for added flavor. I used Ranch Dressing 2 instead of the Basil Mayo Dressing. It is a fantastic dressing with lots of herb flavor. My husband especially loved this salad.

Garlic Salmon

This was so easy. You just chop up some dill, green onions and garlic. Top with sliced lemons and bake in the oven. It was my first time making salmon and it couldn't have turned out better. It was so simple yet very flavorful. I paired this with a creamy dill sauce that included lemon juice, green onions and dill. I served this with Broccoli with Lemon Butter sauce.

Chili I

This chili is fantastic. I made it without the kidney beans because my family is on the Atkins diet. I used red wine vinegar because I had it in the pantry. It added a good flavor. I'll definitely be making this again, probably this week. We topped it with chopped white onion, sour cream and cheddar cheese. It was paired with a BLT salad.

Ranch Dressing II

Cream Dill Sauce

This dill sauce is great for salmon or as a vegetable dip. I used fresh dill instead of dried. I made this with Garlic Salmon. It has all the same flavors: dill, green onions and lemon. It was my first time making salmon and it turned out perfect.

Chantal's New York Cheesecake

This cheesecake turned out beautifully. Everyone who tasted said it was the best they ever had and went back for seconds. I served it with a strawberry puree. It was the first cheesecake that I've made. I was always intimidated by the springform pan, but now I know there's nothing to it. I didn't have a pan large enough to do a water bath. So I filled a 9x13 glass dish with boiling water and placed it under the cheesecake. It turned out perfect, plus no cracks on the top of the cheesecake. I baked it for one hour, then turned off the oven and left it in for 5 hours without opening the door. Then I put it in the refrigerator unwrapped for 18 hours. I used the crust recipe that someone else suggested earlier: 1 1/2 c. graham cracker crumbs, 1/2 c. sugar, 1/4 c. finely chopped uUnsalted nuts (walnuts, pecans), 1/4 c. melted butter, 1 tsp. cinnamon and a 1/4 tsp. nutmeg. Mix together and press into bottom of 9" springform pan. I popped in the 350 degree oven for about 3 minutes so I didn't have a soggy crust. I didn't think I'd taste the pecans but it gave the crust a great flavor. Most important for the cheesecake batter, start with room temperature ingredients.

Cantonese Dinner

I made this for my husband last night. He loved it. I deleted the mushrooms and doubled the sauce. I added stir-fry veggies for extra nutrition. I'll freeze it with rice for rice bowls for lunch or dinner.

Baked Ziti I

This is delicious. I halved the sour cream and added some ricotta cheese, plus some spinach for a little extra nutrition. My husband thinks it needs more spice, but I thought it was perfect. I might add some fresh chopped garlic for a little extra kick next time.

Chicken Enchiladas II

These were excellent. It was my first time making enchiladas and it was very quick and easy. It has a very mild flavor and needs to be spiced up though. Next time I'll add a jalapeno pepper and some more green chiles. I'll be making it again very soon. I would double the sauce.

Oven Roasted Red Potatoes

I used Good Seasons Italian dressing mix instead of the onion soup mix. Next time I'll try it with Ranch dressing mix. It had a really good flavor but didn't crisp up like I wanted them to. I'll broil them for the last few minutes when I do this again.

Fluff Dip for Fruit

This dip was wonderful. I served it with fresh pineapple, honeydew, cantaloupe, grapes, apples, plums and strawberries. I added 5 drops of red food coloring to the dip to complement the strawberries. It turned out a pale pink. The apples weren't well received but the rest of the fruit went fast. My husband loved it. I'll make it again for my next party.
