Sure to Fool 'Em Vegan Stuffed Shells

Fantastic! My family loved this. We're vegans for health reasons, not moral ones, so I was okay just using a purchased pesto because I didn't figure in only a couple of tablespoons there was enough Parmesan to hurt us. I also used a jarred sauce for ease. This has gone onto our "win" list for sure!!

Mexican Pasta

This was fabulous!! My family recently adopted a vegan lifestyle, and this was one of the first recipes we tried. You definitely won't miss the meat when you make this. I made one change, though: I traded the pasta out for cooked brown rice. Everyone in my family adored it. I'll be making this again for sure!

Five Ingredient Pasta Toss

I loved this. It was so easy and delicious. The only change I made was to heat the garlic and oil for the infusing instead of just letting it sit at room temp. Also, I used tri colored penne instead of regular farfalle for a nutrition boost. Definitely recommend this dish!

One Pot Pasta

This was a good concept but the pasta never really cooked completely. It was very starchy and gummy. I recommend cooking the noodles separately even though it means using an extra pot.

Old-Fashioned Lemonade

Delicious. I didn't have any lemons on hand, so I used bottled lemon juice. It was fine, but I'm sure it will be even better with real lemons, so I'll try that next time. I knew going in that I prefer my lemonade on the tart side, so I cut the sugar back to 3/4 of a cup, and that was almost right. Next time I'll start with 2/3 of a cup and go from there. (I had exactly a cup of lemon juice left in my bottle, so I couldn't just add more juice to get the tartness I desired, but it was still good. A full cup of sugar would have been too much though.)

Chickpea and Couscous Delight

I loved this but can only justify 4 stars because my family didn't adore it. It's great for a busy night though - it took me only 16 minutes from start to finish. And only cost about $3 for 4 servings plus leftovers!
