Slow Cooker Italian Beef for Sandwiches

Reviewed: Oct. 15, 2000
Tasty and flavorful, as well as easy to make. There is an error in the list of ingredients: it calls for a 4.7 oz package dry Italian salad dressing mix. That would be way too much seasoning. The correct amount is a 0.7 oz package.

Beef Barley Vegetable Soup

Reviewed: Jun. 30, 2001
It comes out just as tasty if you put most of the ingredients in the pot (cubed meat, bay leaf, carrots, celery, onion, mixed veg's, beef buillon, stewed tomatoes, black pepper and water) and slow cook it for 10 hrs or so, then add the barley and salt during the last 20 minutes of cooking. MUCH simpler this way and saves time from the original recipe.

No Bake Peanut Butter Pie

Reviewed: Mar. 23, 2002
Great recipe. Only it doesn't take a whole 16 oz tub of whipped topping. More like 3/4 that amount.

Oven-Fried Pork Chops

Reviewed: Feb. 7, 2001
Tasty and easy. I used Italian-style bread crumbs instead of the stuffing mix and it worked great.

Sweet and Sour Meatballs II

Reviewed: Jun. 3, 2001
Good recipe. The meatballs are too plain, though, with only salt and pepper. One should either use seasoned bread crumbs or add some seasoning spices (dried parsley, sage, etc.). I added three more dashes of soy sauce to mellow the sweetness of the sauce.

Deviled Eggs I

Reviewed: Apr. 19, 2001
Good basic recipe, but it can be made even better with some of the additions suggested by other raters: sweet relish, horseradish, etc.

Banana Pumpkin Bread

Reviewed: Feb. 22, 2002
This is a great bread, and easy to make, too. I can't praise it enough. I can taste the banana, pumpkin and honey in every bite. I put a lot of golden raisins in it and it is just the best quick bread I ever made/ate. It did need to bake longer than the recipe indicated - more like an hour rather than 45 minutes. Rating: Five stars +

Butterscotch Brownies I

Reviewed: May 4, 2001
Good, but they dry out fast. 32 bars out of an 8x8 in. pan? You're kidding... I don't serve brownies (or for that matter anything else) in pea-sized portions. The recipe makes 9 normal-sized brownies.

Red Velvet Cake IV

Reviewed: Dec. 21, 2000
Another recipe trying to fit 10 lbs. of stuff into a 5-lb. bag. Way too much batter for 3 8-in. pans. The recipe should have asked for 3 9-in. pans, and even then I am not sure the batter would have fit properly. The pans kept dripping, making a mess in the oven. Another matter: in step 1 the recipe specifies 350 F as the oven temperature to be used. In step 5, however, the temperature asked for is 325 F. I used 325 F and ended up having to keep the pans in the oven for about 15 more minutes, at 350 F. other than than that, it did come out well, and was highly liked. Will make it again, but using the 9-in. pans.

Black Bean and Couscous Salad

Fabulous salad. Can't have enough of it. I used Taboulleh and chopped green pepper and it was fantastic.

Slow Cooker Chicken Cacciatore

Reviewed: Dec. 9, 2001
I rate this recipe 4 stars. Someone ought to edit it to indicate the needed amount of salt (which has been left out of the list of ingredients). I added some Italian seasoning herbs and a small can of Italian-flavored tomato paste. The liquid was rather runny so I had to thicken it with some cornstarch.

Cheesy Corn Casserole

Reviewed: Mar. 15, 2001
Most excellent. I've used more cheese than the recipe requires, both in the batter and on top. It came out finger-licking good. Five stars.

No Bake Cheesecake II

Reviewed: Dec. 9, 2000
Another pie recipe asking the cook to fit 10 pounds of stuff into a 5-pound bag... The filling amounts specified are way too much for a 9-in pie crust!

Brown Family's Favorite Pumpkin Pie

Reviewed: Dec. 11, 2000
Thank you for sharing this delightful recipe. I had enough pumpkin for two pies last night, so I made them. The pie was as light and smooth as can be, and the streusel topping was delicious, too. However, next time I will half the amount of streusel, as I find it to be a little too much for a pie (and it almost overcomes the nice flavor of the pumpkin filling).

Easy and delicious tasting. There's nothing to this recipe and the gravy goes so well on mashed potatoes. Great!

This cake is delicious. So rich, though. When I make it again I will replace the oil with apple sauce, as previous users have suggested, to cut down some on the fat and calories.

Different Chicken Cordon Bleu

Easy and tasty. A whole bag of stuffing is way too much for a 9x13 in. dish. Probably half would do just fine.

Pumpkin Pie Squares

Reviewed: Feb. 12, 2002
Great recipe. Had to bake it for 10 more minutes than the recipe called for, to make sure the pumpkin layer is set. Goes wonderfully with some whipped cream on top. Cool and refreshing, too.
