I like the taste of these cookies... best I have tasted in a LONG time. However, I cannot figure out why mine come out flat. I admit that I did not melt the butter but it was definitely room temp and very soft. The eggs may have been a bit on the cold side and I used 2 whole eggs. I used my stand mixer to blend everything. The batter was definitely lighter and fluffier at the end. I made some immediately. I also made some after letting the dough cool in the fridge overnight. Either way, they came out flat. Any suggestions would be helpful as I really would like these to come out right.
