Rhubarb Strawberry Crunch

Yum, Yum, Yum!! Followed alot of the other reviews and added less sugar to the fruit, added a little more flour to the fruit and a dash of cinnamon as well - the topping was fabulous and even my husband who doesn't care for fruit desserts gobbled this up! Thanks for the keeper!

Really enjoyed this recipe - loved that it had more zucchini that typical recipes - pretty much followed to a T except for using applesauce in place of the oil - will probably make this again!

Nutty Apple Crisp

Great recipe that was a spin off of a classic. I used more like 7 cups of apples and added cinnamon and some vanilla to the crisp topping - I can't imagine the recipe without cinnamon and the vanilla added more depth of flavor in my opinion. I used 1/2 cup pecans b/c that is what I had on hand - put them through a nut grinder, so they were more of a fine chop than called for but they added a great texture and flavor to the dish - will continue to make through apple season!

Zucchini Pancakes

This was delicious. I decided to use the full amount of parmesan and thought the amount was fine. I added some granulated garlic and a pinch of nutmeg as well. I dried the zucchini in some paper towels to get out the excess moisture before adding the other ingredients. I sauteed them in olive oil and found the best ones to be the smaller, thinner sizes. If they were too thick, they got a little mushy in the center. I will definitely make these again - great idea to do them small for little appetizers even. Thanks for sharing.

Brown Sugar Pound Cake I

WOW! This was a wonderful pound cake. The brown sugar just gave it a nice flavor that was not your usual pound cake. I doubled the vanilla called for and made it in a bundt pan. I made sure to really whip the sugar and butter, adding both gradually to really keep it light and fluffy, and added each egg slowly as well. It was easy and everyone loved it. Served it topped with fresh strawberries and whipped cream. Thanks for the recipe!

Iced Pumpkin Cookies

Delicious!!! I followed to a T except for the icing. I didn't really think they needed it after tasting them, so I made half the amount called for and subbed maple syrup for the vanilla. It was nice, I lightly drizzled over the cookies and had just enough of it. They are wonderful - the only thing I'll do different next time is make more! Thanks for sharing.

Pizza Dough II

This recipe is really good. I've made it about 4 times now and it's always come out really well. The only things I've had to change are the amount of flour - it is a little too much for me and won't incorporate - I cut out a half cup of the bread flour. I also have added a little bit of seasoning as well -- a little bit of thyme and granulated garlic really kick it up! We've used it to make breadsticks as well, they turned out wonderful. Thanks for sharing.

One Bowl Chocolate Cake I

This recipe was very good. It was a rainy Sunday and my husband wanted chocolate cake, and I was out of butter, which my usual recipe calls for. It was extremely easy to make, and it turned out very moist. I did add about a 1/2 tsp. cinnamon, which enhanced the chocolate flavor. A great recipe in a pinch since the ingredients are almost always on hand. I will definitely make it again.

Baked French Fries II

These were a great start to something I improved over time. I like the spices, but add some garlic powder as well and just a tiny bit of cayenne to kick it up a bit, plus the red/orange color looks great! The main thing that bothered me about the recipe as is: 25 minutes at 400 is not nearly enough. I've tried it in a regualr oven and they were only about halfway cooked, and the next time I used my convection cycle and they still came out not cooked enough. I cut them in 1/4 inch slices as called for, some even thinner. The first time I made it I picked the recipe b/c of it's quick cook time, we were in a hurry. We ended up throwing them out and getting fast food on the road. Needless to say, when I made them again, my husband was skeptical. But after several tries, I've found that 45-50 minutes at 400 does the trick. And definately line your pan with parchment and/or tin foil! Great start to something we;ve now enjoyed alot!

Braised Balsamic Chicken

This chicken was very good. I was afraid it to be too syrupy, but it wasn't. I did feel like the tomatoes tasted to vinegary, might add them even later next time. Overall, pretty good though.

Spicy Grilled Shrimp

This recipe was great. I followed the recipe to a T and wouldn't change a thing about it, it had wonderful spice, but wasn't too hot and the perfect amount of lemon flavor came through. I marinaded the shrimp for about 15 minutes before cooking and used an indoor grill pan. The only thing I'll do different next time is make more!! Thanks for the keeper!

Fabulous Football Dip

This recipe was great!! I used Italian sausage, and added crushed red pepper, oregano, and 1/2 cup shredded cheddar cheese. I browned the meat and then cooked it in the crock pot on low. Everyone loved it!! Will definately make this again, thanks for sharing!

Buffalo Chicken Dip

This recipe was very good. I bought a rotisserie chicken at the store and shredded that instead of using canned chicken. Then I used 2 cups of shredded cheddar instead of 1 1/2. It was a little heavy, (I used low fat cream cheese, but regular ranch) but it still tasted good, just not one of those dips you could eat all night.

Mexican Chicken Corn Chowder

This was very tasty!! I added some finely chopped celery, carrots & green peppers in when adding the onions, and replaced the greens chilis & hot sauce with 2 chilis with adobo sauce. That gave it a smoky, spicy flavor. I also used chicken stock instead of the water/bouillon mix and used 2 cups of stock instead of 1. It had a great consistency and our company raved about it. Even better, it reheated great for lunch. I'll definately make this again!

Monkey Bread

This recipe was wonderful and so easy!!! I also used a large ziploc bag to toss the cinnamon sugar mixture with. Made for easier cleanup. Also, I used the biscuits that have "flaky layers" and it made it even more delicious! Everyone raved about it and it was so easy!! I'll definately be making this one again! Thanks for the recipe!

Champagne Peach Punch

This was great! I made just as is, except subbed peach schnapps for the brandy and added cointreau as well to enhance the OJ flavor. I used frozen raspberries instead of ice cubes or an ice ring. What a hit! One guest who doesn't even like peaches asked for the recipe! Will definately make again!

Banana-Zucchini Bread

This was pretty good. I didn't think it was "great", but I made some changes, so I might have done that on my own. I substituted apple sauce for the oil to make it healthier. It was somewhat dry, and this may have caused that, even though I have subbed apple sauce before to other recipes without any problems. I also reduced the white sugar to 1/3 cup. It was a good amount of sugar. 1 cup would have been way too much. I also switched out pecans for walnuts. Also, it only needed to bake 35-40 minutes. I took it out after 40, but since it was a bit dry, maybe it could have come out even sooner. Overall, it was very good, just a little dry. Will probably play around with it & try it again.

The Burger Your Mama Warned You About!

These had too much going on in them. The red onion, bell pepper and garlic took away from the great flavor of the burger. When making them however, I left 2 burgers plain without those as I had a picky eater over, the plain ones were great. The barbecue sauce added a great flavor and really enhanced the flavor you look for from a burger. Probably wouldn't make this again, I like other variations better.

Mini Frittatas

This was a very good recipe. After reading other reviews, I decided to change the cheeses to jazz up the flavor a bit. It's always been better with a different cheese. I've done jalepeno jack cheese, feta, gorgonzola and gruyere all with rave reviews. The only thing I don't like about the recipe is that it really is quite dry and almost rubbery as leftovers. If I'm making it for just my husband and I, I half it so that I don't waste as much, but when I make it for a crowd, there's never any leftover anyway!
