Award Winning Peaches and Cream Pie

I tried this recipe late yesterday night to serve for family. It was delicious. Everyone loved it, and asked for second helpings. I did not have a 10" pie pan though, so I used my 13x9 glass pan. Cooked for 30 min exactly (probably because it was shallower than being in a 10" pie pan). I might have been able to pull it a minute or two before and just let it sit. We ate it warm - didn't wait for it too cool. For people who want to know: THERE IS NO PIE CRUST. The cream cheese topping is the 'crust'. Method: I put the batter in the pan and carefully laid out the peaches side by side - three rows of peaches. Then, I dolloped as much of the cream cheese mixture as I could (left a 1" border around the end). Used a spatula to grab it all. Then, I carefully spread it over the peaches. Last, I dusted the cinnamon sugar mixture. That made the whole house smell GREAT. I'll make this recipe again for my next family event. Super easy.

Oatmeal Pancakes II

I made this recipe for 12 servings. I loved it. It was delicious. I didn't use buttermilk though. I substituted 2 1/2 c. of milk with a little over 2 tblsps. of lemon. THEY were delicous and sweet. Not fluffy, but I didn't expect them to be. But very delicious.

Tater Tot Bake

This turned out really tasty. In my version though: 1) browned meat, remove from pan, drain fat; 2) sauteed onions then beef to onions; add few tablespoons of wirschester, plus salt / pepper 3) while that is cooking, cook the cream of mushroom over medium heat, add 1/2 cup of milk.... then follow rest recipe

Buttered Biscuits

I put my bowl and butter in the freezer 1/2 hour before beginning. I cut in butter with my fingers. I added slightly MORE buttermilk to get a stickier dough = fluffier biscuit. I was REALLY HAPPY with the results. DELICIOUS! I will be making these again. I made 4 giant biscuits out of this recipe.

E-Z Drop Biscuits

Made these biscuits for the first time and they were a delicious compliment for my country gravy. I didn't use cream of tartar though. Next time I make them though, I'll add a dash more salt.
