Impossibly Easy Ham and Asparagus Pie

I happened to have all the ingredients and was looking for something new to make out of my leftover easter ham. This hit the spot and unexpected guests raved over it and had seconds. Like the other reviewers, I can see many variations of this with different veggies and meats.

Cauliflower Gratin

Fairly easy and tasty. I also nuked fresh cauliflower for a couple minutes before baking and forgot to add the bacon, but was still pretty tasty, and guests loved it.

Angel Hair Pasta with Shrimp and Basil

Hubby loved this one! I only used one can of diced italian style tomatoes bc that's all I had on hand, but it worked out fine. I am definitely a beginner cook, and it was easy enough to throw together pretty quickly. I also agree with other reviewers that 8 oz of pasta wasn't enough for the amt of sauce.

Scrambled Egg Muffins

I used chorizo, and it came out great. I used half with liners and half greased with an olive oil spray... I have to say that the non-lined ones came out nicer, and I had no problems with them sticking. Also, I had extra mixture, so I actually filled them more like 2/3 full, and I thought they came out to a nice size- more puffing out at the top.

Crunchy No-Fry Chicken

nothing special here. maybe I just don't like chicken breast, but it came out dry and tasteless for me. I doubt I will make again, which is a shame... I bought a whole box of corn flakes specifically for this!

Marie's Easy Slow Cooker Pot Roast

this one's a keeper- I find so many slow cooker recipes a letdown, but my brother in law commented that it was restaurant quality, and asked for the recipe. I omitted celery bc I didn't have it on hand, but I loved that the sides are included. it will be on my regular rotation.

Rosemary Lemon Grilled Chicken

this was just moderate for me. tasted ok, and was simple enough, but I think it was a little overkill on the rosemary for me. if I try this again, I'll definitely use it sparingly.

Ropa Vieja in a Slow Cooker

yum! I used a tri tip roast since that's what i had on hand, added some red wine to the mix and used only 1 of each type of bell pepper. still tasted great, and the company was impressed by it. love that it's super easy!!

Cream Cheese Frosting II

I used this on pumpkin cupcakes and added some cinnamon to it. It was a big hit...I actually like that it's not as sweet as most other frostings, too

Easier Chicken Marsala

I highly suggest that you remove the cover the last 5 minutes or so of cooking in order to reduce the sauce more so there is less of an alcohol taste (esp if you're doubling the marsala)

Not bad, and pretty easy. I think I overcooked the chicken a bit because it came out a lil dry, so be careful. Also, I wish there was more sauce.

Bacon Wrapped Barbeque Shrimp

Did it a lil differently- instead of oven, I put it on the George Foreman grill and it turned out pretty good. Only I recommend not using thick sliced bacon, because the cooking time is off and my shrimp did become rubbery. Plus the bacon flavor is too overwhelming with the shrimp. If I had used regular thin sliced bacon I'm sure it would have turned out great.

Neiman Marcus Chocolate Chip Cookie

I really like this recipe. It IS in the Neiman Marcus website, but it is not the one sent around with the hoax email about the $250, which contains blended oats, not instant coffee. I've tried making this once with dark brown molasses sugar (from Trader Joe's) and did not thoroughly soften butter before mixing with the sugars and the dough came out dryer than usual and the cookie was a bit tougher and not as chewy. I recommend using light brown sugar and they come out fantastic! One of my favorites!
