Chicken Artichoke Casserole

I made this exactly like the recipe, except that I browned the chicken in butter, for more flavor. I was really surprised at how good it was. It was very different. I wouldn't have thought to pair artichokes and curry powder, but it was a good mix. We ate so much we were stuffed. Yummy!!

Tuna Melts

I made these tonight and even the kids liked them. I used about 1/4 of the mayo called for - I used four cans of tuna and one cup of mayo. I did with onions and without, but sauteed the onions in butter first until they were soft. Very good!

Perfect Baked Potato

Salmon Fillets with Creamy Dill

This was really good. I'm not a big salmon person, but all of the kids and dh love it. I halved the recipe (like everyone else recommended)and had plenty for the 2 fairly large fillets. We had it with potato pancakes and broccoli and it was a great meal. It's a keeper for us :)

Easy and Delicious Chicken

This was easy and delicious. I skipped the cream of chicken soup and just added heavy cream with a little extra chicken broth. It still turned out great and since I made the dressing from scratch too, the whole dish was from scratch and super healthy (no preservatives or other nasties). We had it on WW noodles to make it even healthier with sauteed spinach on the side. Even the kids ate it! :)

Summer Squash Casserole with Nuts

I love zucchini and squash and this was delicious. I didn't have nuts on hand, so I made it without nuts. It was good, but I think it would have been better with nuts.

Spinach Stuffed Chicken Breast

My stepkids could not eat enough of this, and they are the most picky eaters I know. I've been married to my husband for three years - this is the first recipe that got me at 10/10. The highest before was an 8/10. Definately a favorite, and not a terrible amount of work, but not a little bit either.

Tasty Green Beans

This was a delicious way to fix green beans and make them kind of different. I halved the amount of soy sauce because that was all I had, and it came out fine. ADDENDUM: I made it later and forgot to halve the soy sauce and it was terrible! Remember to reduce the amount of soy sauce. It was very salty and gross!

Belle and Chron's Spinach and Mushroom Quiche

This was super yummy. I unfortunately didn't have bacon on hand, so I used sausage instead. My stepkids even liked it fairly well. What a great way to get spinach into them first thing in the morning! I also added extra cheese because we're big cheese lovers. I made two pies, even though I only had enough crust for one. It still turned out fabulously without the crust. Thanks! :o)

Beef Enchiladas II

This was delicious. I had to use American cheese because I was out of cheddar, and I added taco seasoning as was suggested by someone else. I also used ground turkey. My husband had four helpings! Super super yummy. I will definately make this again and again.

Red Skinned Potato Salad

This was absolutely delicious - I took it to a family potluck and even though I quadrupled the recipe it was all gone. We loved it. I didn't make any changes, and my nine year old stepdaughter really did most of the work - it was very easy to make :) Yummy yummy.

Broccoli Rice Casserole

This was a very yummy casserole, even my step kids gobbled it up and they are very picky eaters. We ate just the casserole with some cream corn, and it was a complete meal. I lessened the water and added extra broccoli. I didn't cook the broccoli all the way because I didn't want it to be mushy, but it was a touch undercooked, and I like my broccoli fully cooked. Overall it was delicious, and I will definitely make it again.
