Hazel's Meatballs

Country Green Beans

Perfect in every way! I make this recipe at least once a week while the beans are fresh in the garden. My kids groan anytime I make beans a different way. I follow the recipe exactly.

Creamy Summer Squash Soup

Donna's Chocolate Zucchini Bread

My kids love chocolate muffins from our local coffee shop. This recipe is the closest I've come to matching those; these muffins are delicious and moist! I substitute half the oil for applesauce to make them a little healthier and add a cup of chocolate chips.

Blueberry Zucchini Bread

These are delicious! The amount of blueberries is generous and fantastic! I make them in jumbo muffin pans and made several changes to get the total calories down below 350. First, for the muffins, I cut the sugar to 1 3/4 cups as other reviewers suggested and substituted half of the oil for applesauce. I'm a sucker for crumb toppings so I used the crumb topping recipe from cookiequeen with a few exceptions. For my crumb topping used: 2/3 cup flour, 1/2 cup brown sugar, 1/2 cup white sugar 1 tsp cinnamon, 1/2 stick softened butter-mixed altogether with hand. You hardly notice the little cuts and don't have to feel as guilty about eating them.

Creamy Jalapeno

Every time I make this recipe it gets gobbled right up! After several different times, I prefer to make it the night before so the flavors really have time to work together. We like thinks spicy so I always leave the seeds and veins in the jalapenos and typically double the amount (depending upon who's coming for dinner). One thing I learned the hard way: don't skip the food processor. It's just not the same without it.

Jalapeno Steak

This wasn't bad but we found the lime overpowered the other flavors. I could see using this in fajitas or similar dish but would not recommend it if you're just looking for a spicy marinade for grilled steak.

Spinach Basil Pesto

My family loves this recipe! I don't keep pine nuts in the house so the four times I've made this recipe, I didn't use any and we didn't miss them. To change it up (and use what's in my garden), I've made some batches with a couple jalapenos thrown in which adds a nice kick. It's also very good mixed with melted cream cheese for a creamy pesto sauce.

Creamy PHILLY Pesto Chicken

This is a keeper! Even my husband who is not a pesto fan went back for seconds. Next time I will season the chicken lightly during the saute (garlic & pepper). For my pesto, I used this recipe: http://allrecipes.com/recipe/spinach-basil-pesto/detail.aspx. FABULOUS!

Pesto Cheesy Chicken Rolls

This was good. I also dipped my chicken in egg and rolled it in bread crumbs prior to baking. My chicken came out a bit dry but I think that was my fault and not the recipe. My only regret was that the cheese melted right out of the chicken. Next time I make this, I may put some pesto and cheese on top. Would be good with noodles.

Garlic Roasted Summer Squash

This was not our favorite summer squash recipe; I probably will not make this again. It wasn't bad, just not our favorite. There is a lot of oil; I found it hard to brown the squash to a nice crisp. My family preferred Peg's Summer Squash Bake (we have a lot of squash and are trying a lot of recipes).

I've made this recipe three times now and love it. It's a big hit at pot lucks and a great way to use up my abundance of summer squash. We like it with just yellow squash or alternating with zucchini. We're spice lovers so I took advice of other reviewers and added some diced onion, 1-2 cloves diced garlic, dried basil (to taste), half a diced red chili or jalapeno (depending on what's laying around), 1/3 diced red pepper, and cut the butter in half. It turns out perfect every time. Thanks for this super easy & fantastic recipe!

Summer Squash Puffs

I made these for a BBQ at our house and they got eaten as fast as I could make them! I followed advice from other reviewers and added 1 cup cheddar cheese to the squash mixture and 1/2 tsp garlic salt to the flour mixture. I used a TBSP measuring spoon for dropping into the oil and had no problems cooking all the way through even though I boiled my squash first. This was a great way to use my yellow squash that had grown too large on the vine.

Breakfast Sausage Casserole

My grandma used to make a similar recipe. I used this one for Christmas breakfast and it was gobbled all up! The only change I made was I added 3 TBSP green onions to the egg mixture and cut back the milk by 1/2 cup to ensure it wasn't soggy. It was perfect!

Downeast Maine Pumpkin Bread

I've made this recipe twice now. The first time, I followed the recipe exactly, the second time, I took some other reviewer's suggestions and replaced 1c of white sugar for 1c brown sugar and added 1 tsp vanilla. It was very good both ways, definitely the second method created richer results. In both versions I added 1c chocolate chips, which worked better with the first version due to the bread being less rich. This recipe yielded 9-11 mini loafs that took 40 min in my oven.

Irish Chicken and Dumplings

I used this recipe for my leftover Thanksgiving turkey. It's better than my mom's (which is saying something, especially for comfort food)! I did take a tip from other reviewers and used 2/3 chicken broth, 1/3 water as well as added onion salt & onion powder for flavor. Go easy on adding any extra salt; with the broth and the soup, my batch really didn't need it.

Pumpkin Pie Cake

The only tip I have to is make sure all the cake topping is covered with butter (I found it best to make my cake concave in the center). Batter where the butter cannot spread will stay powdery and be a bit of a bummer.
