I was let down with this recipe. I'm not a 'natural' cook, so it is challenging to know how to 'doctor-up' a recipe. I didn't like the ratio of so many tomatoes and so little texture with the lost cauliflower. Nor did I like the high acidity taste of the tomatoes. I ended up adding a little sugar and that did help. My husband decided to break out a little bit of Garlic Alfredo sauce and add it. It did make it creamy... but in my opinion, it was still lackluster. I did like the idea of substituting cauliflower for meat.
