Quick and Easy Pizza Crust

Reviewed: Aug. 12, 2012
Great basic recipe. I didn't allow my dough to rest at all and the pizza still turned out great. Quick and simple.

J.P.'s Big Daddy Biscuits

Reviewed: Aug. 12, 2012
Love this recipe. I've made biscuits just about every weekend with this recipe and they always turn out great. I use butter instead of shortening and almond milk instead of regular dairy milk. Like others have said, do not knead the dough. I simply mix a few times, just until all of the ingredients are combined, then I flaten it out by hand and cut my shapes. Excellent!

Fluffy French Toast

Reviewed: Sep. 8, 2012
Great recipe. My main problem with other recipes is that the toast would stick to the pan or the taste was blah- this recipe was just right. Quickly, easy, and delicious.

Shrimp Francesca

Reviewed: Jan. 15, 2014
This is a really simple and quick way to prepare shrimp. I served it over quinoa with sauteed asparagus on the side. I had my doubts about the bread crumbs and I worried that the dish would be soggy and taste bland but I was pleasantly surprised- it was delicious.

Flourless Eggplant Pizza

Reviewed: Jun. 13, 2014
I really enjoyed this recipe. I follow a ketogenic diet, so traditional pizza is on my forbidden foods list. I decided to peel the eggplant, slice as directed, and then toss in salt and let stand in a colander for about 30 mins (to pull water out of the eggplant). I was surprised by how much liquid came out and I'm really glad that I added this step because my end product was just barely dry enough to be firm underneath my toppings. If I would have skipped the salting I think my pizzas would have been mushy. I topped mine with lots of cheese, bacon, and sausage...piled on high. Delicious. Thanks for sharing.
