Ninety Minute Cinnamon Rolls

So easy and delicious! My dough seemed a little sticky at first but when I rolled out I used parchment paper and it rolled out just fine. It is really cold right now so I had to soften my butter in the microwave for the filling. I ended up melting it and pouring it over the rolled out dough before sprinkling the sugar/cinnamon mixture on top. this worked out fine, though the butter ran over the edge a little bit. Cooked in foil pan b/c I don't have a muffin tin. Came out beautiful! I have limited baking supplies so I eyeballed the salt, but I think it could have had some more. It would have been nice to have a little saltier dough to go with the really sweet filling. Still, enjoyed by the entire family!

Marrakesh Vegetable Curry

Way too much cinnamon. It overpowers the taste of this dish. Did not like. Tasted better when mixed with sour cream.

Tilapia Soft Tacos with Chipotle Cream

These were very good. I made fish tacos with them. The cream sauce really makes this dish. Very spicy! My son said that it tastes so good but it is sooo spicy! (He drank 3 glasses of milk with his dinner) :)

Quinoa with Peas and Parmesan

This was quite good. My family had never had quinoa and everyone enjoyed it, including the kids. My only neg thought with this dish is that it needed more celery and in larger pieces because I liked the crunch of it. It would be good for some texture.

Awesome Broccoli Casserole

Although I hate to be the one to say how a "recipe is great and here is how I modified it to make it so..." I loved this recipe because I think the sauce is what makes it so wonderful. I used fresh broccoli and cauliflower florets slightly cooked, mixed with the noted sour cream, cheese, and soup. I then mixed this with the croutons (only moistened with broth - it doesn't need butter - it so creamy otherwise!) I then put it all in a shallow baking pan and baked it as usual. The veggies were perfectly cooked - I don't like them soggy which I think you would get with frozen. Overall, it is the sauce that really makes this dish - it made things so cheesy and yummy! Thanks!

Slow Cooker Enchiladas

Very good, good comfort food. I did change a few things based on what I had on hand... Used shredded cooked turkey, sauted with green onion and black beans and a little bit of water, with homemade taco seasoning. And for the soup mix - used only 1 can of cream of soup and added a couple dollops of lite sour cream. and only 1/2 of the cheese. Definitely would have been too goopy as is. And it was a little salty. Next time will use low salt version of soup. Oh, and didn't have regular salsa - used TJ's salsa verde. Overall, very easy and quite good but I enjoyed the shredded meat and bean mixture to give it a little texture - otherwise would have been too mushy.

Creamy Smoked Salmon Pasta

Not good. No flavor at all. Needed more salt and we used some hot pepper sauce to give it some kick. It got 2 stars b/c the kids actually enjoyed it. Won't make again

Mexican Baked Fish

Nice recipe. Very easy and simple ingredients. The children enjoyed it, tho the salsa I used was a little spicy. Next time I think I will use a green salsa and monterey jack cheese. Served it with a rice and spinach mixture. A bed of fresh spinach would be nice under the fish to cook and soak up some of the liquid.

Chicken and Corn Chili

Wow! Excellent recipe. Used Paul Newman's Roasted Garlic Medium Salsa and this gave the chili a little bit of a kick. Everyone at the party we had raved about this chili and it was so easy to make! I did add a little extra liquid b/c once the chix is shredded it is very thick. I added 1 can each of kidney and black beans - I think you could what ever beans you favored b/c the recipe is so basic and flexible. Definitely will make again and again! Thanks!

Erin's Indonesian Chicken

This was a very good recipe. Dh said it was "tasty." I doubled the sauce and I am glad I did. I mistakenly grabbed chili garlic sauce instead of paste, and I used 3 tsp of chili sauce, but I thought it could have used more. Testing the sauce alone, it did not do much for me, but once it was mixed with the onion, chicken and green beans it was very good. A good blend of flavors.

Simple Shrimp Pasta Salad

This was just ok, though the kids really seemed to enjoy it, hence the four stars. I thought it was a little dry and thought it might do better with a flavored mayo. Roasted pepper maybe??

Oven Fried Chicken II

Excellent! Made it for an informal get together and everyone thought I had actually deep fried the chicken! I have made it many times now, sometimes with extra seasoning in the flour, sometimes not and it is always delicious. I do cut down on the fat a little and only put in about 1/2 of the oil called for for the bottom of the pan, but don't go much less than that b/c the chix will start to stick to the bottom. Yum, yum, thank you for the great recipe. So much easier/less smelly/less mess than deep frying with still the great taste.

Uncooked Banana Pudding

Very tasty, but not quite as wow as I expected. Unfortunately, not a big eat at the party I served this at, and so I had lots of left overs, so maybe I just got sick of the left overs. Would have preferred more pudding than wafers.

Mexican Whole Wheat Flour Tortillas

Not happy with this recipe. Way too much work, would rather just buy them at the store. Maybe just inexperienced with making tortillas, but found the dough to be sticky and hard to roll out thin enough. But I did eat the tortillas, they just did not taste how I expected them to. Will not make them again

Applesauce Sandwich

Yummy! I used homemade bread and sliced it thick to make sure it didn't get too soggy. And I used Marionberry Applesauce from Trader Joe's. Sprinkled some powdered sugar on top and viola! Breakfast! Delicious. I think tomorrow I am going to try a French Toast version and dip it in an egg before frying up and see how this turns out. I never would have thought to put this recipe together - THANKS!

Breaded Turkey Breasts

Very tasty! My husband and son (4 yrs old) were eating the strips as soon as I took them off the pan. Juicy and yummy! I served them by putting them on top of hot pasta and then pouring a homemade tomato sauce over them and then melting some jack cheese on top. YUM!

Dump Cake I

Gave 4 stars only bc so many people at the party that I served this at raved about this cake, but personally I did not think it was anything special. It is good and very easy to make (used toasted pecans as I am allergic to walnuts) but I would only make this again to take to a potluck (not for personal family consumption). I did use a deeper dish than requested and this did change the cooking time (almost an hour) and maybe the texture as well. I will try a shallower dish next time.

Easy Cajun Jambalaya

Delicious! Easy to make. I also added 1 can of diced tomatoes and shrimp, b/c that is how I remember jambalaya to have. Would definitely make again - oh, I spiced it up a little to accomodate my husband and I.

Sour Cream Chicken Enchiladas

Yummy! I modified the recipe by using corn tortillas, using green enchilada sauce and green chile salsa (had young children to serve). I would definitely use this recipe again - never had used corn tortillas for enchiladas before - delicious! I am not a big fan of cilantro but I used the full amount recommended and I did not think it over powered the dish at all.
