Red Skinned Potato Salad

This potato salad is the best I've ever made. There are two reason I give it 4 stars and not 5: #1.Too much mayo. I was careful to weigh the potatoes and use exact measurements so if you do this, I suggest cutting the mayo back 1/2 cup and it would be just right. #2. Be careful what you serve this with as the large amount of bacon has a strong flavor. It is DELICIOUS potato salad but it will compete with other meats. We served this salad at Christmas with ham (another salty meat), and the two meats were a little much. Next time I make this I will serve it with milder meats, or cut back a little on the bacon.

Banana Banana Bread

PICK THIS ONE! Delicious, moist, easy! I used "all purpose flour" and added a 1/2 teaspoon of vanilla. I also added a small packet of sliced almonds, adding most of it to the batter, and a little to the top after pouring it into the loaf pan. I also sprinkled a small amount of brown sugar to the top as well before baking. Don't overdo this, as brown sugar has such a strong flavor - just a little bit. I didn't measure the bananas, but used 6 large ripe ones. This turned out perfectly, espcecially right out of the oven. Also good with a smear of real butter after it's cooled off. I'm not great at baking, so I highly recommend this easy recipe. It's a no brainer!

Golden Rum Cake

TO DIE FOR!!! I didn't change a single thing and it was awesome. My guests agreed - everyone had seconds. I'm over 40 so "awesome" is not a word I use everyday! I was worried about pouring the sauce in the pan and re-inserting the cake but tried it anyway and it worked out perfectly. All of the rum was soaked up within an hour. Some reviews say the rum was too strong but I disagree. I don't like to drink rum either, but found the cake to be just right. It is less strong and taste even better the second day. Don't be scared, this is a first time hit!

Slow-Cooker Pepper Steak

Easy, Fast and can prepare most of it the night before. Picky husband loved this. Because of my work hours I had to leave it in the cooker for 8 hours, on low. The meat was tender, cut with a spoon and was perfect. I cut my strips 2" wide and about 1/4 thick (strips but not small strips) The peppers- I put the sliced bell peppers on the very top hoping they had a chance - no chance! They were soft but the taste was still good when I placed everything over white rice. Sauce: like others I added core cornstarch mixed with a little water to thicken it up, but it was still a soupy consistency. Regardless, the hubby had two huge servings which is rare! One cooking tip from granny: NEVER tell them how it was "supposed" to turn out!

Black Magic Cake

MAKE IT A BLACK FOREST CAKE! Awesome cake recipe. I followed exactly and used it to make Black Forest Cake. For the filling and icing I took just those recipes from "Holly's Black Forest Cake" and it turned out divine! I made this for a party of 40 and everyone RAVED about it - even the picky boyfriend who's favorite is Black Forest. *Note - this was my first time to make a cake from scratch, so don't be scared!

Best Ever Chicken Casserole

This was very tasty and very easy! My husband is SUPER picky, and loved it. I made several easy changes which is why I give it 4 stars: I shredded the chicken instead of cubed for a better texture. I only used 1/2 of a medium onion and sauteed it in olive oil with garlic before adding to the bowl. Otherwise the onions would have overpowered and without garlic the dish may have been bland. I used 1/2 mayo and 1/2 sour cream to be less greasy. I sprinkled 1/2 cup cheddar cheese on top before adding the corn flakes. I used the whole cup of corn flakes in the mixture and added more on top, just enough to cover. As others suggested, I used a smaller pan. It came out perfectly, not runny and not dry. I served it on top of quick white rice and with a side of vegetables. Great dinner, fast, cheap & easy. With my changes I give it 5 stars. =)

Apple Pie by Grandma Ople

What did I do wrong?? The taste was wonderful but it looked like a DISASTER! I followed the recipe exactly, and in the oven it looked pretty good. Then...the cave in! It was runny and sunk like the Titanic. I've made apple pie before and never had this problem, but I've always used recipes that call for mixing the apples and mix together. We scooped the baked "pie" into a bowl and called it cobbler. It was delicious but I'll stick to my old recipe because an applie pie should be pretty don't ya think? Grandma Ople had a trick because with this many raving reviews, I must have done something wrong!

Bodacious Broccoli Salad

This is delicious and even better the second day! I'm not typically a raw broccoli fan but I couldn't stop picking at this after our Thanksgiving dinner! I made this the night before so the flavors would blend which they did. Suggestion: If you want the bacon to be crisp, add it just before serving. I put mine in with everything else and while it was great, I would have preferred the crunch.

Rum and Sweet Potato Casserole

YUM!! Huge success at Thanksgiving! I don't like to drink rum, but it's to die for in this recipe. Some reviews state the rum was strong but I disagree. I followed the directions exactly and the taste was there but discreet. For example everyone asked what the flavoring was in the casserole that made it so good. I've tried other similar recipes but this one turned out the best. Easy and delicious.

Priceless Pecan Pie

It was "ok". I made this for Thanksgiving hoping for a new twist on Pecan Pie. No one went for seconds and it was the last leftover in the fridge a few days later. It was ok but just nothing special or intersting about the taste - almost (not quite but almost) bland. I suggest if you want pecan pie, make Pecan Pie!

Perfect Pumpkin Pie

So easy! I followed the recipe exactly as directed and it came out perfect. If you're looking for something "different" this is not your recipe - this is a good 'ole fashioned, traditional pumpkin pie. Very good!

Marinated Grilled Shrimp

Easy and Delicious! I didn't have fresh basil so I used dry. This marinade is subtle and doesn't overwhelm yet gives the shrimp a nice clean taste. This is the second time I have used this recipe. The first time I marinated 3-4 hours for. This time about an hour. The tase was the same. I used frozen raw, deveined, tails off shrimp - could be easier and was a big hit with our dinner party. I mixed my own serving with wild rice and it made a meal.

Spicy Shrimp and Grits

Can I give this 6 stars?! I add diced jalapenos for extra spice. I also drain the Rotel tomatoes, otherwise the recipe is too runny. Other than that I follow the recipe exactly as given. **TIP - if you're in a hurry you can add cooked shrimp to the pan right before mixing and pouring in the dish. I cannot count how many times I have made this and there is never ANY left!

Grandma Ople's Apple Pie

With the exception of adding 1/8 tsp each of cinnamon and nutmeg to the apples, I followed this recipe exact. I cooked for recommended time (at first) and the pie looked beautiful. I let it sit and when I cut the first piece it was runny and gooey - so disappointing! The taste however was wonderful. I suspect without the 2 added spices it would have been rather bland. I covered the cut part of the pie with foil and put it back in the oven for an additional 15 minutes which is just what it needed. After sitting overnight it cuts beautifully into a slice. I give this recipe 3 stars for two reasons - having to add cinnamon and nutmeg, and the runny center when followed exactly as submitted.

Fluffy Pancakes

I tried this recipe today for the first time and followed it completely. My (picky) husband said, "I don't know what you did different today but these are FANTASTIC!" (i typically make Bisquick pancakes). These are easy to make, soft, fluffy but not so much that they aren't cooked in the middle - just right! *Tip : I cooked these on a griddle that came with my new INDUCTION cooktop. It recommended cooking pancakes on level 6 but this burned them so I found 5 to be perfect. The Induction cooktop cooks much faster than my electric griddle. This made 6 small-medium pancakes - enough for 1 hungry husband. I recommend doubling the recipe if you plan on cooking for 2 or more. This is our new house recipe!

Grilled Marinated Shrimp

Baked Salmon II

I don't eat fish so my rating is based on a super picky husband who LOVED it! The only thing I changed was I added a little bit of dill. The only negative comment my husband made was, "This was GREAT but I think next time maybe leave off the dill." I suggest preparing exactly as it says. It was cooked perfectly, and turned out pretty and flaky. I did as another suggested and put a big piece of foil in the glass dish, THEN added the oil and other ingredients. I wrapped it up while in the dish, cooked it and the dish comes out clean. Great idea and easy clean up.

Mini Meatloaves

Excellent recipe! Easy, tasty and NOT greasy. I've used other meatloaf recipes on here before and this is by far the best. My picky husband and pickier mother-in-law both approved...although she whispered.."needs garlic". She has to find something! Everyone else loved them. I didn't change a thing.
