Slow Cooker Chicken Taco Soup
I first made this for my other half , who honestly, was less than eager to try it. After he had munched his way through 3 bowls, it was safe to assume we had a winner. I have since prepared it for group events, family get-togethers and pot lucks and it is always popular, the recipe requested over and over. The first time I prepared as per the recipe but ever since I have made my personal version, as follows:
I use a British wheat beer, tomato paste as opposed to tomato sauce, frozen corn instead of tinned and added an extra breast. I also cook on low for at least eight hours and use a fork to start pulling the meat apart after about 6 hours without removing it from the slow cooker, it really falls apart by itself. Very nice!
