Greek Pasta with Tomatoes and White Beans

Broccoli and Tortellini Salad

I only made half this recipe and it was dinner for 2 and then leftovers for lunch the next day. Blanced the broccoli as suggested. Used 1.5x the amount of mayo suggested but used olive oil based mayo to lighten. Also used turkey bacon for same reason. Only used 1 tbs raw sugar. This recipe is sweet enough with the raisins in each bit that the dressing does not need to be that sweet. Also used mix of sunflower/pumpkin seeds with peanuts since that is what I had in the house. Only half of recommended onion. Used tri-color three cheese tortellini for a bit more color. Wish I had done as recommended by some and held back a bit of the dressing for serving at the table. A good recipe. Will make again.

Amish Meatloaf

Made this as in directions. Used ground sirloin for less fat. Used apple cider vinegar. Drained the fat before adding glaze. Used digital thermometer and cooked to 160 degrees. Took close to 90 minutes. I am fond of Brown Sugar Meatloaf and this is my new favourite.

Laura's Unbelievable Chicken and Pasta

Not one to make again. Gave two stars because it is a mix of good ingredients and it makes a generous amount. But it is very bland. The sauce is thin. Even adding salt, pepper, parsley, chopped onion, fresh garlic, oregano and shaved parmesan it lacked flavour. To doctor it up any further would be a whole different recipe.

Luscious Lemon Cheesecake

I gave 4 stars to this recipes as it stands here. There have been so many suggestions throughout the reviews that many options are here to make a whole other cheesecake. From reviewing all, I came up with the following: used 1 lb cream cheese and 1 lb ricotta. Used gingersnaps and pecans for the crust. Definitely increase the peel, juice and substitute lemon extract for the vanilla. 55 mintes was a good baking time. Put pan of water under cheesecake. Don't omit the sour cream topping. That was my final take-away.

Cranberry Orange Cookies

These are tasty and easy to make. A nice fruit/nut cookie that is pretty. Flavor and texture wise these are satisfying, but I was not as impressed as some of these other outstanding reviews.

White Chocolate Snack Mix

I scaled this down to 3 servings, and it was more than enough. Used raw peanuts instead of salted because that is all I had in the house. This is very good and very easy to make. I didn't find it to be the "couldn't stop eating it" concoction, but I like it.

The Best Bean and Ham Soup

Very nice recipe and very easy. Two changes I made. I did not use stock, I used water and a ham hock instead of ham. The soup was still very flavorful and had less fat and sodium using water instead of stock. I also quick soak the beans by boiling them for 3 minutes and then soaking them in the hot water for 1 hour.

Meatball Sandwich

Tasty recipe. Very easy. I used ground turkey to make the meatballs just to cut down on the fat. 20 minutes baking time was just right. Served with a green salad. Will make again.

Cheese Ravioli with Three Pepper Topping

I decided to greek it up a bit. I sauteed chicken in olive oil, lemon juice and garlic. Then I removed the chicken and sauteed the peppers in the same pan. Only used one cup of vegetable broth and returned the chicken to the pan with the broth. I also used spinach feta ravioli. I thought the peppers were too soft. They should be cooked less time. Served with a ceasar salad.

Mango Sorbet

Outstanding! I used two large mangoes, 3 Tbs symple syrup and 2 Tbsp honey. Juice of whole lime. Very easy to make. Excellent texture. Made just enough for a simple indulgence. Try it with a piece of dark chocolate candy.

Caribbean-Marinated Shrimp and Scallops

My husband did not care for this. I thought the flavoring was excellent. We both love jerk and we used a Jamaican seasoning that was just right. This is a very pretty dish. Was a shame the quality of the shrimp and scallops I used was not as good as the other vegetables in this recipe. I will enjoy the leftovers.

Lemon Zucchini Bread

Flavor is excellent. Timer was turned off during baking, so I had no idea how long it baked. Came out a bit undercooked. I added 1/2 teaspoon allspice and the zest of an entire lemon. Also used 1 Tbs canola oil in a 1/2 measuring cup and filled the rest of way with unsweetened applesauce. Only used 1/2 cup sugar. Love the lemon zucchini bread more than the orange.

Southwestern-Flavored Ground Beef or Turkey for Tacos & Salad

Three pounds of ground meat for 10 servings seemed quite a lot to me. I made this for a leaner taco salad, so I scaled down. Used half a large onion, 1 large garlic clove, 1 tsp oregano, still full Tbs cumin because we love cumin, 1 pound ground turkey with about 2 Tbs lime juice squeezed in while onions were sauteed. Still used the full can of tomatoes since this was for taco salad. I also used crushed white corn tortilla chips to thicken the mixture till it reached the consistency I preferred. This was excellent. It still made quite a lot for a taco salad.

Marrakesh Vegetable Curry

I followed the recipe to the letter. It was very tasty, but I did overcook the veggies. The flavors were wonderful, but since it was overcooked it was not very attractive on the plate. Served with white rice. Will try again and watch the pot more closely.
