Spaghetti with Bacon
Commend sense is needed here, never cook bacon in olive oil! Cook the bacon until crisp,drain. Cook garlic in about 1Tb of the olive oil until soft but not brown. Toss garlic and bacon in spaghetti along with any veggies you like and the parsley. Then drizzle good olive oil to taste over all and toss. I like to add a few pepper flakes. Not greasy and very good this way. Also added parm and onion.

Roasted Duck
This was not worth the mess it makes of your oven. Had to clean the grease from oven twice before turning the self cleaner on. It also needed more flavor and skin does't crisp up well. First whole duck I have ever cooked and will be the last.

Leftover Pancake Breakfast Sandwich
You can also use leftover french toast. I have been doing it for years.If you use the expensive long french loaf of bread in most deli's,cut it thick. when you have leftovers cut the thick piece into two thin ones,you can either toast or not. make your sandwich with any breakfast meat,eggs,cheese,I even put onion on my husbands and he carried them in his cooler for breafast on the road (he will eat a lot of things cold). Just make your french toast like you usally do, I'm sure it would be good with regular sliced bread also and the maple syrup! Thanks for the recipe,I will try using pancakes,I love leftover pancakes with jam.
