Benny's Famous Jalapeno Poppers

My hubby's work group loved the last batch I made ( I haven't tried making it with the corn yet) and there were NONE left over!! I haven't been able to do them on the grill yet but this time around I put them on a normal roasting pan and a "roasting pan" we fashioned out of a lined cookie sheet and lined wooden skewers (which operated as slats to keep the jalapeƱos out of the grease). This time around I accidentally miscounted on the bacon and didn't have enough slices so we dredged the tops of the remaining filled jalapeƱos in crushed Fritos. Will let you know how that comes out! :) a few things that helped this time around were:

Baked Buffalo Wings

I have made this recipe five times and each time it gets better. I changed some of the methodology per the advice of other reviewers: 1) I made sure the wings were very dry. 2) I didn't have a baking rack and instead used a roasting pan (wings came out nice and crispy!) 3)I did not refrigerate after dredging. 4) I used the modified amount of cayenne pepper (1/2 tsp). 5) I baked them without the sauce half way through on 400 then brushed on liberal amounts of wing sauce mixture and baked them for the rest of the time on 450. 6) after taking them out brushed on some more sauce to have a crispy yet saucy texture. This review has been Hubby tested and approved of the improved methodology :)

Chef John's Banana Bread

This recipe came out wonderfully. The bread was moist but didn't crumble. There was no over arching flavor that dominated (sugar or flour). I did modify it by removing the chocolate chips, nuts, and cocoa. My husband wants his banana bread to taste like banana bread through and through. I would also use 4 bananas next time instead of 3. Regardless, it was a really good first go round! Will use this recipe again and make a batch with the other ingredients.

Barbecued Pork Kebabs

Made this in an oven since we don't have a grill but still came out well! Smelled SO good in the oven. Sweet and savory flavor :)

Butternut Squash Soup

Just made this recipe - it was REALLY easy. I tweaked it slightly in that I had to use some items I had on hand. I used red onion, I used cajun seasoning instead of cayenne, I used butter instead of margarine. I only used 4 ounces of cream cheese (that seemed to be enough). To top it off I put a swirl of Agave nectar and Tapatio for a sweet and salty kick. Very good. Would probably add a little garlic and more salt and pepper next time. :)
