About this Cook
I have a toddler, a baby, and another baby on the way (2 under 2, to become 3 under 2 1/2). My family eats VERY healthy - no wheat, limited grains, LOTS of fresh produce, and very light on the sugar and substitutes. Also, NO processed foods in my house anymore. I cook everything from scratch, which is WAY different than I was taught in professional kitchens and culinary school. But, we're in the best health of our lives, getting my parents off of their diabetes medications, preventing diabetes for ourselves, and giving our children the best start.

None! Neither of my parents can cook. haha

Spinach with a Twist
Yum! I used Monterey jack because I don't have any other cheeses at the moment. Both of my toddlers had 3 helpings apiece and then wanted more! I will make this many, many more times.

Zucchini Pizza Bake
The original sauce was BLAND, but I perked it up with garlic, a touch of brown sugar, salt, and oregano. It was fantastic. I also added garlic to the "crust", and it came out great. I cooked it on "convection" to firm up the top of the "crust" a little. (5 stars with my changes, 4 for the original recipe because I would not have thought to do this) My family loooooved this, and it will go into our regular rotation. I topped with olives & pepperoni.

Fried Empanadas
I did alter this recipe heavily - sorry... I used the dough recipe, using margarine in place of shortening, and that was fantastic. I didn't have the spices - I used the rest to make taco seasoning - so I used my taco seasoning instead! I used chopped onion and green peppers. It was sooooo good. My father who NEVER eats meals had 3 of these!!! He also asked that any leftovers be put away for him. I'm still in shock! There is no better compliment! The rest of us used sour cream and/or salsa to top them. Oh sooo good. Thank you so much for this base recipe!
