Oatmeal Banana Nut Bread

This recipe is absolutely GREAT! I made it using brown suger, and added half cup of peanut butter, a cup of Craisins, and a chopped up bar of dark chocolate. Baked up very dark brown. To die for!!!

Honey Cornbread

This was a definite HIT! Even my mother-in-law, who won't eat anything that is not Chinese, absolutely loved it! I can't get cream where I live, so I used "old yogurt" which is very thick, and mixed with the eggs using a mixer. very smooth! Baked in a 10" cast iron skillet ... results? WOW! Can't thank you enough!!!

Fluffy Pancakes

This was a real hit with my 11 year old daughter, and ME! First of all, I only used 1 Tbs of vinegar, because I was wary of the strength of Chinese vinegar, the milk turned immediately. The only other thing I did different was add a little cinnamon and a dash of nutmeg to the flour mix, and about 1/4 tsp of vanilla to the liquid mix. The batter was awesome just sitting in the bowl! Poured onto a cast iron skillet with a little corn oil, they fried high and fluffy! I topped them with butter, syrup and some Strawberry jam on the side. Oh, also a fried egg (over easy) on top. Yum yum! I can't get buttermilk in China, so this recipe worked around that problem. Many thanks to the author for this wonderful addition to my breakfast menu!

Jay's Signature Pizza Crust

This was a wonderful pizza crust. I made it in the bread machine, turned it out onto a large cutting board, then line a 10 inch (sort of small) cast iron skillet with it, trimming it around the outside edge to make a deep dish crust. I then baked it for 10 minutes at 400 degrees before assembling the pizza. After assembly, I baked it at 325 degrees (convection mode) for about 20 minutes. The crust was very full and great tasting. About three minutes before taking it out I brushed the outer layer of crust with olive oil and seasonings. It was a hit! I will use this crust in the future. I did not roll the dough out very thin, as I wanted thick crust deep dish. It rises a lot, more than I expected. But, where I live in China, pizza is unheard of, much less the kind I made using this crust! Many thanks to Jay!!!
