I'm a proofreader and desktop publisher by trade. But, I've been working mostly freelance for the last year while I earn my Web Design degree. I also help others with WordPress setup, design, layout, and maintenance. My BMI is 46.1. My wife's is similar. Dieting doesn't work; never has. So, finally, I've decided to just "eat healthy" and see where that leads me. I'm starting out using a combination of Summer Tomato's "How to Eat Healthy" recommendations and Dr. Weil's "Anti-Inflammatory Diet". I figure eating such a diet will, at least, keep me from having to fight all of the glycemic highs and lows throughout the day. And, then I'll have more energy to begin walking for exercise.

I was best in class in my middle school beginning cooking class.
My cooking tragedies
Biggest challenge is getting all the different parts of a menu synchronized so they're all done, hot (or cold as the case may be), and ready to be plated at the same time. I almost inevitably burn something or get something done so early that it's the complete opposite of the temperature it should be once all the other items are ready.

Busy Day Chicken Rice Casserole
The rice didn't cook in the 1-1/2 hours in the oven - nothing's worse than a Chicken-Rice casserole with CRUNCHY rice. Also, the liquid didn't get soaked up or evaporated or whatever SHOULD have happened - so, I ended up with heavy-onion-soup-mix-tasting, chicken soup with crunchy rice. Ack. Shortcuts are great, when they work. This one doesn't work.
