Cheesy Ham and Hash Brown Casserole

I've made this several times since I first tried it in 2004. I use just one can of potato soup and the frozen o'brien hashbrowns with the peppers mixed in. I find that the peppers give it a much better taste. Thawing out the hashbrowns in the microwave also cuts down cooking time.

Salisbury Steak

These were a hit at my house! I served with mashed potatoes and garlic green beans (great and can be found on this website). I did as some others suggested and used a packet onion soup,a can cream of mushroom, and doubled the gravy. Just a tad salty for my taste. Next time I will omit salt and maybe use half an onion packet, and add mushrooms because I forgot this time.

Garlic Green Beans

When I started making them, my husband was like "Are you going to use all that garlic?!" but they turned out really great! A very nice change to the green bean and bacon classic.

Singapore Noodles

I made this last night for my family and they all loved it! My husband loved the three different meats and my daughter (17 mos) loved the noodles! My daughter's godfather loved the curry flavor! Great dish!

Burgundy Pork Tenderloin

After reading the reviews, I altered the recipe a little and it was tasty and super moist! My husband absolutely loved it! I did brown the meat a couple minutes on the stove before putting in the pan. I left out the celery, and use 1 cup beef broth and 1 cup red wine. I just used regular old red cooking wine which is probably why it was a bit salty after adding two packes of pork gravy. But I spooned in a little sugar and it worked great! Hubby says I definitely need to keep this recipe in regular rotation!

Amazing Crab Shells

I did as the last suggested by leaving out sugar, using sour cream instead of mayo, and baking in mini pastry shells. Omigosh! Soooo good! Absolutely delicous!!

Chocolate Covered Strawberries

These were good, but I had trouble with the styrofoam. I used a take out box, which didn't support my heavy strawberries. Next time I will stack a few plates like someone else suggested. Make sure you dip fast, because the chocolate will turn into frosting quick!

Tantalizingly Tangy Meatloaf

Better than your average meatloaf, but we aren't really meatloaf eaters. Thought I'd try it anyway since it got 5 stars. Not bad. I used 1 1/2 lbs ground beef, added some onion powder, and cooked in an 8x8 pan to have more sauce per bite (also helped cook a little faster).

Yum-Yum Corn

I used canned corn because that was in my pantry. The hubby and I thought it was okay. Something different to do with corn. I baked for 30 min but it still didn't brown. I'd probably make it again but not often.

Easy Tuna Casserole

This is a great basic recipe for tuna casserole! SOOOO EASY! I did add an extra can of tuna, an extra can of cream of mushroom, milk, and of course extra cheese! Also threw in a can of peas just because it had been sitting in my pantry forever and gave my baby girl some added nutrition. Thanks Lindsay!

Breaded Parmesan Chicken

This was pretty good and moist. I used bread crumbs from the can instead of stuffing and cut the Italian Seasoning to 1 tsp because of the other reviews. However, the coating was not crunchy, but rather soggy (probably my fault though). The bread crumbs may have had something to do with it and I did have to switch pans because the 8x11 pan was too small so I might have had too much butter. Will definitely try again though!

Chocolate Eclair Dessert

Yummy! I used banana cream pudding but next time I'll try the recommended vanilla. It does taste good after it's been in the fridge a while, but I also liked it fresh when the crackers are still crunchy.

Spinach Lasagna III

This was absolutely delicious! I made it for dinner with fried fish and got compliments from everyone! I also thought it could use a little more spinach and sauce but was fantastic anyway! I followed the recipe exactly except I used 1 1/2 tsp Italian Seasoning instead of basil and oregano (didn't have any on hand). Hubby said "This is a regular!"

Chutney Chicken

This has got to be the easiest dish I have EVER made! I'm talkin 5 minutes and it's in the oven. I didn't know what chutney was until I tried this recipe (it's actually a spicy condiment), and to be honest I was pretty skeptical of the way it looked when I was putting it in the oven. But it's very good and very simple. Goes perfect with rice. Needs something else though for a meal...maybe sautee some fresh green beans?

Easy Italian Chicken

I must have done something wrong because my chicken was bland, a little spicy but still bland. I scaled the recipe down to 4 servings and used 5 drumsticks. I couldn't taste the garlic, and I just didn't like it. Sorry.

Beef Enchiladas II

These probably would've been good if I didn't screw it all up with my beginner non-cooking skills! I rolled mine way too big and ended up using three pans! LOL! I used canned enchilada sauce and you may need two cans. The beef was also a bit plain and I even added green peppers, onions and garlic powder. Next time I will definitely use a taco packet like others suggested.

Stuffed Shells I

Presentation was great! Pretty easy except it takes some time to fill each shell. Everyone loved it and there were no leftovers. Next time I might trying adding some spinach too!
