Sausage Casserole

Reviewed: Oct. 31, 2004
I'm going to give this 4 stars. It actually didn't quite come out the way I expected but it was still pretty good. I scaled the recipe to half and use maple sausage which might have made the difference. I also used ricotta instead of cottage cheese. The hashbrowns didn't quite crisp up either. My 2 year old daughter absolutely loved it though and kept asking for more.

Toasted Garlic Bread

Reviewed: Oct. 17, 2004
So I had to improvise since I ran out of garlic and oregano. I used dried minced garlic and spicy spaghetti seasoning. Still came out great! I can't wait to try it again with the right ingredients.

Not quite the same as my lasagna, but still an easy and very yummy substitute! I'll use both recipes!

Honey Curried Roasted Chicken and Vegetables

Reviewed: Oct. 13, 2004
This was so good! I made a couple changes because of what I had on hand: omitted ground ginger and salt, used regular mustard, and used a few squirts of sriracha sauce (a sweet asian hot sauce) because I ran out of curry powder. Boy was it yummy and goes well with rice. I also used about 10 wings instead and baked with a batch of sauce for about 30 min, then added veggies with another batch of sauce for another 20 min in the oven. Hubby said its a regular!

Iced Mocha Fusion Shake

Reviewed: Oct. 9, 2004
I eyeballed the amounts and omitted the vanilla and sugar. Then I added about 3-4 shots of E&J cream liquor. I also used instant cappucino mix. Delicious!

Broccoli and Cheese Brunch Casserole

Reviewed: Oct. 2, 2004
I did have to make some changes because of what I had on hand: only used 4 eggs, used colby jack instead of cheddar, and didn't cover with foil. Even with the smaller amount of eggs, I had to cook for about an hour and even increased to 375 the last 15 minutes. It looked great coming out of the oven, and I thought it was pretty good. The hubby said it was okay.

I liked this, but the hubby didn't. Good thing he's not the one rating!

Quick Tuna Casserole

Reviewed: Sep. 22, 2004
Not bad for how fast you can put it together. I have to admit that I prefer to make my tuna casserole a different way, but this is good when you got to get dinner on the table fast.

Anniversary Chicken I

Reviewed: Sep. 21, 2004
This was great! My husband loved it, and my two-year-old was even saying "good". Served with rice and broccoli. Only changes were I cut the teriyaki sauce down to 1/4 cup, used good old regular bacon, and of course a little extra cheese.

Alice's Sour Cream Chicken Breasts

Reviewed: Aug. 19, 2004
I liked this one. My husband thought it was okay but a little bland. I cooked mine on the stove top in both whole and cut up pieces. I omitted the wine and added more broth and parmesan. I served the chicken over linguine and broccoli which was very good. My husband isn't really into pasta, so I gave him broccoli and a baked potato covered with the sour cream sauce.

Simple Beef Stroganoff

Reviewed: Apr. 13, 2004
So easy. I made minor adjustments: used about 1/2 lb ground beef and browned with 1/2 onion and 1 clove garlic, added milk and 1 beef buillon cube to soup mixture, and a little more sour cream. Yummy! Even the hubby said it was good and he hates this type of food. I also used elbow macaroni which worked fine.

Tater Tot Casserole III

Reviewed: Mar. 13, 2004
I made this last night and everyone thought it was okay. I seasoned the beef and used 2/3 cup milk. I also used cream of chicken because it was all I had. Maybe that is why it didn't come out so well.

Beef Enchiladas II

Reviewed: Mar. 1, 2004
These probably would've been good if I didn't screw it all up with my beginner non-cooking skills! I rolled mine way too big and ended up using three pans! LOL! I used canned enchilada sauce and you may need two cans. The beef was also a bit plain and I even added green peppers, onions and garlic powder. Next time I will definitely use a taco packet like others suggested.

Easy Italian Chicken

Reviewed: Mar. 1, 2004
I must have done something wrong because my chicken was bland, a little spicy but still bland. I scaled the recipe down to 4 servings and used 5 drumsticks. I couldn't taste the garlic, and I just didn't like it. Sorry.

Chutney Chicken

Reviewed: Feb. 29, 2004
This has got to be the easiest dish I have EVER made! I'm talkin 5 minutes and it's in the oven. I didn't know what chutney was until I tried this recipe (it's actually a spicy condiment), and to be honest I was pretty skeptical of the way it looked when I was putting it in the oven. But it's very good and very simple. Goes perfect with rice. Needs something else though for a meal...maybe sautee some fresh green beans?
