Broccoli Chicken Roll-Ups

I was a little nervous to try this but it came out very good. I did not nuke it, instead I covered with foil and baked at 400 degrees for about 35 min. I did season the chicken breasts with the basics: salt, pepper, garlic and onion powder. I also put a little salt and pepper on the chopped broccoli, and sprinkled a little shredded cheese on top at the end. Flavor was good and overall, pretty healthy. Will make again. Great every day budget dinner!

Award Winning Soft Chocolate Chip Cookies

Best chocolate chip cookie ever. I took them out right when the edges started to brown but when they cooled, they looked underdone. I almost put them back in the oven for another min or two but tried one and they were just wonderful. The texture of these cookies is absolutely PERFECT. I used a half butter/half crisco combo, and added a dash of salt. No nuts.

White Chocolate Macadamia Nut Cookies II

Excellent recipe! Just made these this morning with my kids. Only changes I made were I used a little less macadamia nuts and a little more white chocolate chips. I also refrigerated the dough for about 10 min while I waited for the oven to preheat and did not grease the baking sheet. I cooked them for 9 min and took them out right when the edges started to turn brown. They looked underdone but when they cooled, they were PERFECT! Had some friends over and they adored them, asking for a third and fourth cookie. I was even told by one friend that it was the best cookie he'd ever had!

Awesome Roast Beef

I used this recipe as a base to make my first pot roast while using the slow cooker for the first time. It was great! Very simple. Because of other suggestions, I used regular liquid beef broth and roasted garlic cream of mushroom. I added a few seasonings and some splashes of worcestire sauce and brandy. I also cut up a whole onion and threw it in at the beginning, then added potatoes and carrots about 2 hours in. Next time I will probably add celery and mushrooms. I poked the roast with a cooking fork to absorb the flavor and served with crusty bread. Quick and easy, just the way I like!

Salmon and Spinach Fettuccine

I'm giving this 4 stars because it had really good flavor although I wish it would have specified that you have to simmer the sauce for a LONG time to get the right consistency. Mine was kind of gritty but now I know for next time! I used italian seasoning instead of oregano and diced tomatoes instead of sun-dried. No capers.

Velveeta® Cheesy Beef Stroganoff

This was really good. I used the 8 oz package of cheese and it worked great. I also seasoned the beef with some garlic powder, onion powder and pepper because I just can't imagine cooking any meat plain anymore. Added sour cream and would have added a little milk if I had any on hand. Very similar to hamburgar helper both in taste and ease, but it did taste better and was healthier. Plus it cooks up a whole lot more!

Pad Thai

This didn't look like the real deal but tasted pretty close! Everyone loved it, but most have not had it before. I made mine with shrimp, doubled the sauce and used limes instead. Yum! Also I didn't have directions on rice noodle package, so I called my mom. Toss the noodles in boiling water for 1 min then turn off the heat. Let it sit for 5 min in the hot water, check for softness, then rinse with cold water. So much faster than letting them soak!

Beef and Broccoli

It's ridiculous how good this tastes from a gravy mix! Definitely add soy sauce and take out the beef while cooking the veggies. I also added ground ginger, onion powder and garlic powder and a can of baby corn. Plus I grabbed a bag of fresh pre-cut broccoli (the kind you use for dipping in dressing and such) for super fast results! Dinner was on the table in 20 minutes!

Mexican Lasagna

Very good! I added a can of fiesta corn and omitted the salsa because I did not have any. I also used flour tortillas and 2 cups of mexican-blend cheese because we love cheese! And I threw in some red pepper flakes to give it a kick. My 3-year-old didn't really like it but all the adults ate it up!

Easy Shepherd's Pie with Garlic Romano Potatoes

This was pretty good! The potatoes really do make this dish. I followed the recipe except I used parmesan instead of romano cheese and italian seasoning instead of oregano and basil. I love that you can put all those veggies in and still get my toddler to eat it up! Try adding a layer of shredded cheese under the potatoes.

No Bake Cheesecake I

This was so easy and yummy! I used a ready-made oreo crust and topped with sliced bananas and strawberries. It was absolutely fabulous! Everybody had seconds! Oh, I did cut the lemon juice to 1 tbsp because of the other reviews.

Barbecue Beef Cups

I made the breakfast version of these cups using eggs, bacon, and cheese. They were so darn good! And they reheat so well in the toaster oven! I also used crescent rolls instead of biscuit dough, as I think someone else suggested, which made it very easy to fit into the muffin pan. I will definitely make these again and try the beef too.

Poor Man's Hamburger Steaks

I decided to make this for dinner tonight because I actually had all the ingredients on hand! Well not the saltines, but I just used breadcrumbs instead. It was pretty good and very easy to prepare. Kind of a cheaper variation of salisbury steak, which I think I would prefer if I had more time. But this was good enough for me and the family to make again on a budget. UPDATE: I tried this recipe again but fried it in the pan like another reviewer suggested. Much tastier and faster too!

Brownie Mix in a Jar II

I had to change my review after making the second batch which came out absolutely perfect with these changes: 2 cups sugar, 1 cup buter, 3 eggs, 1/2 cup chocolate chips, 3/4 cup pecans, and 1 tsp vanilla. They were so fudgy and yummy! I brought them to work and my co-workers kept asking me to make more! For gifts, I actually decided to go ahead and bake the brownies and put them in Christmas tubs from the dollar store! So cute!

Creamy Chicken and Rice

Well, my husband and daughter enjoyed it. I omitted the sour cream because I didn't have any and added a layer of green beans between the rice and cheese-chicken mixture. The cheese flavor was a bit odd for me, and it could have just been that I didn't have the sour cream. I might try this again with a different kind of cheese as others suggested.
