Chef John's Lemon Bars

Made them exactly as per Chef John's recipe & they turned out perfect! My husband thought they were a bit too sweet for his taste so maybe next time I'll reduce the sugar &/or increase the lemon. But the crust was perfect, the custard developed the white glaze Chef John mentions, and the timing was just right. I topped them off with some black raspberries I'd just picked & it gave them an extra little festive touch. Definitely a keeper!

Creamed Cabbage

Love this! What a surprise! My CSA loaded me down with a huge cabbage at the beginning of November. There are just two of us & my husband only likes coleslaw, which isn't my idea of a cold weather dish! This creamed cabbage turned out so good I almost ate half as soon as it was cooked. I didn't have any sour cream on hand so I just used a little half & half with a drop of vinegar. I think it would've been just fine without it, too. Yummmee! I feel compelled to comment on Michael Jackson's negative critique. although he says he followed the recipe exactly, I suspect he didn't give the flour enough time to absorb the grease & cook. My cabbage was anything BUT GREASY,

Kale Chips

Oh, boy! These were great! Did a small batch in the toaster oven so they were easy to watch & keep from burning. They never made it to a plate. I ate them right off the pan! :-)

Pumpkin Bread Puddin'

Followed the recipe pretty closely. I oroginally chose because I had leftover egg yolks to use, so the pudding/custard idea was good. Instead of individual cups I baed mine in a casserole. It was a little hard to judge doneness, but after 45 minutes & a clean tester I thought it was fine. Everyone liked it, but I was not thrilled with the texture i.e., too soupy. Maybe next time I'll use stale bread & a more shallow pan, but I will try it again since it was pretty tasty.

Iced Pumpkin Cookies

Very nice, cakey cookie - not overly sweet (which suits me just fine!). I also like the way they hold their shape & don't spread out all over the cookie sheet! I did make a couple of minor changes: used 1 cup brown sugar + 1/2 cup white, used 3tsp pumpkin pie spice plus some extra cinnamon & nutmeg (sorry, I can't say how much - just eyeballed it :-), added 1cup Craisins, and halved the icing recipe (as recommended by another reviewer). My husband loves them without the icing; I like them both ways. Will definitely make them again!

Swedish Cream with Summer Berries

I would give it 5 stars for taste but, as many others have pointed out, scalding the cream was a bit of a mystery. I tried it but it never thickened, even when cooled, so I chilled it, whipped it, & folded it into the sour cream/yogurt. Cut back on the sugar a little & used half grand marnier/half triple sec. The flavor was delightful. I layered it in parfaits with some leftover plum puree which worked out well. Will make it again.

Apple Pie Filling

I first tried this recipe when I rescued dozens of apples after a blow down (before the squirrels cold make off with them!). My pies got such raves reviews that now it's my Go To recipe for apple pie. I find that it only fills four pies, but I think that's because my home grown apples (of a forgotten variety) are on the small side :-).

Mom's Cucumber Salad

Really positive comments whenever I serve this. As others have mentioned, I also salt my sliced cukes for an hour or so & then rinse & drain before adding the dressing. Substituted greek yogurt for half the mayo , left out the salt, & used both fresh & dried dill weed.

Caprese on a Stick

I was asked to bring the appetizers for a party recently at a home where the hostess often serves caprese salad. So the toothpicks seemed like a great, simplified serving idea! I made just some slight modifications: since I had globe basil(very tiny leaves)in my garden, I threaded grape tomatoes & mozzarella balls on the toothpicks, stood them in a glass pie plate, sprinkled them liberally with basil leaves, & then drizzled them with olive oil & about a tablespoon of soy sauce. (The soy is an addition my girlfriend always uses & it provides a nice extra note of salty acidity.) The guests loved them & all commented on the convenience of the sticks!

Insanely Amazing Jalapeno Cheese Dip

When I made this for the first time it was because I had fresh jalapeños to use up! Took some cues from other reviewers & replaced the mayo with soft cream cheese & greek yogurt. Baked in a 350F oven with some extra parmesan on top, then decorated with a few jalapeño rounds & served with thin sliced baguette. Got rave reviews. A definite keeper!

Fudgy Brownies I

Tested these ahead of time for a church function. Pretty well pleased with the result, though I did make one small change first time, i.e., I substituted unsalted butter for the first 1/3 cup oil. Texture was perfect, chewy but not gooey and still moist & tender. Flavor wasn't as strong as I would like - needed more salt (probably because of the unsalted butter), and I'd prefer a more intense chocolate flavor (I'm a dark chocolate lover!). Next time I'll increase the salt to 1tsp, add some instant coffee, double the vanilla, and add bittersweet chunks or morsels on top. If that works, I'll bring it up to 5 stars!
