Glazed Meatloaf I

This recipe was SOOOO good! I've never made meatloaf before because my husband hates it. I decided to give this one a shot. I used bread crumbs instead of the bread pieces, and the 2 lbs. of ground beef fit perfectly into a 12-cup muffin tin! My husband had 3 "mini loaves" for dinner! He LOVES it and so does my daughter, so isn't a big meat eater! The ketchup topping makes this recipe so great, so I agree with the other reviewers who made extra. It's delicious!!

Quinoa and Black Beans

Delicious! I took the advice of other people and used only 1 can of black beans, chicken instead of veggie stock, and added a can of Rotel tomatoes. I didn't think I could pull it off, but it came out tasting great! THANK YOU for the recipe!!

Bacon Cheddar Deviled Eggs

Made these for a company picnic & they disappeared immediately!! I got so many compliments. My co-workers were surprised by the taste since it wasn't the traditional deviled egg, but enjoyed the flavor very much.

King Crab Appetizers

I first tried this over Thanksgiving, and have made them several times since! (And it's only been a month!) Everyone loves them! Like others, I purchased the already-prepared phillo cups. That helps a lot and makes for a pretty presentation. I used canned crab meat & low fat cream cheese the first time, but switched to sushi-type imitation crab sticks and full fat cream cheese. I hate to go that way but they were WAY more flavorful! Definitely a keeper!

Roast Sticky Chicken-Rotisserie Style

I made this for Christmas dinner and am making it again today. My family LOVED it! Like others have suggested, make sure to make a gravy out of the pan drippings. I just added a little cornstarch to cold water, then mixed it in with the drippings in a sauce pan. I put some mashed potatoes on a plate, topped it with chicken & drizzled the gravy over it all. YUM!
