Beef Enchiladas II

This recipe was pretty good. I used canned enchilada sauce (to save some time), and I omitted the olives. The only thing I would change would be to use corn tortillas in place of the flour ones. I personally like the taste of the corn ones better.

Easy and Fast Cajun Chicken Caesar Salad

I didn't have all of the required ingredients on hand, so I substituted a few things. Even with the (minor) changes, this recipe was great. The chicken had an excellent flavor. I saved some of the bacon to top the salad with. My husband liked it so much, he had me make it again later in the same week.

Buffalo Chicken Wings I

This recipe was really good. The wings had a good flavor, and you can get them as hot or as mild as you like. I did use more sauce than the recipe called for. I wanted to make sure the wings were thoroughly coated.

Apple Pie by Grandma Ople

I made this pie for a family get-together back in October 2003, along with another pie. This one was the hit of the party!!! I added a little extra brown and white sugar (because I used tart apples), 1 tbsp of cinnamon, .5 tablespoon of nutmeg, and 1 tbsp vanilla extract. I put the pie on an aluminum foil covered cookie sheet while baking, to catch any overflow. If you're looking for a great apple pie, this is the one!

Baked Spaghetti I

I made this recipe last night (with some changes). I used no green peppers, a jar of spaghetti sauce in place of the tomatoes , smoked sausage slices, an extra can of mushroom soup, and extra water. Even with the changes, this recipe was great!!! My husband, the finicky eater, even loved it. It's a really versatile recipe. You can make any number of changes, and it still comes out great. Thanks LaDonna.

Beth's Spicy Oatmeal Raisin Cookies

Wonderful recipe. The spices are a great touch. I made these for my family and my office Christmas party. They DEVOURED them - nothing left but crumbs!!! My mom even asked me to make another batch for her co-workers. They couldn't get enough. I cooked mine for about 8-10 minutes, depending on the size, because my oven gets really hot. Don't walk away, they brown pretty quickly, and they finish baking outside the oven.
